Roasted Apples and Sweet Potatoes

1. Cut peeled sweet potatoes into 1-inch cubes
- 3 pounds sweet potatoes (about 5 medium-size sweet potatoes), peeled
- 2 large Granny Smith apples, peeled
- 2 tablespoons butter, melted
- 2 tablespoons light brown sugar
- 1 teaspoon grated orange rind
- 1 teaspoon kosher salt
- 1/2 teaspoon coarsely ground pepper
Buffalo Chicken Tortilla Roll-Ups

In a mixing bowl combine the blue cheese, cream cheese, sour cream and the cheedar cheese
- Ingredients
- 2 cup shredded cooked chicken
- 8 ounces light cream cheese, softened
- 1/2 cup Buffalo wings sauce
- 1/4 cup blue cheese, crumbled (I left this out)
- 1 cup cheedar cheese, shredded
- 2 tablespoon sour cream
- 4 (6 inch) large flour tortillas
- 2-3 green onions, thinly sliced
Sesame Pulled Pork Sandwiches

Place pork in a 5-qt slow cooker; add 3/4 c salad dressing, turning to coat
- Slaw:
- 3 pork tenderloins (1 lb each)
- 1-3/4 c reduced-fat sesame ginger salad dressing, divided
- 1/4 c packed brown sugar
- 1 pkg (14 oz) coleslaw mix
- 4 green onions, chopped
- 1/4 c minced fresh cilantro
- 2 Tbsp reduced-fat sesame ginger salad dressing
- 2 tsp sesame oil
- 1 tsp sugar
- 1 tsp reduced-sodium soy sauce
- To Serve:
- 12 hamburger buns, split
- Wasabi mayonnaise, optional
Cheesy Spaghetti Squash with Tomato Sauce

Preheat the oven to 375 degrees
- 1 spaghetti squash (about 2 1/2 lbs)
- 2 tablespoons EVOO, plus more for tossing
- 1/4 cup finely chopped onion
- 1 clove garlic, crushed and peeled
- 1/2 teaspoon dried thyme or 1 tsp dried oregano
- 1/4 teaspoon crushed red pepper
- 1 14 1/2 ounce can diced tomatoes
- salt and pepper
- 4 ounces coarsely grated provolone
- grated parmesan, for garnish
- chopped flat-leaf parsley, for garnish
Carrot Cake Sandwich Cookies

Cookies: Toss together carrots, brown sugar, ginger and cinnamon
- Cookies:
- 3/4 c grated carrots (about 2 medium carrots)
- 2 Tbsp firmly packed dark brown sugar
- 1/2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/3 c raisins
- 1 (16.5 oz) package refrigerated cookie dough
- Cream Cheese Icing:
- 5 oz cream cheese, softened
- 1/4 c unsalted butter, softened
- 1 c powdered sugar
- 1/2 tsp fresh lemon juice
- 1/4 tsp vanilla extract
Breakfast Sliders

Preheat oven to 350º. Slice the rolls in half lengthwise
- 12 12-pack 12-pack of dinner rolls or Hawaiian sweet rolls
- 9 9 9 eggs, scrambled
- 6 6 6 slices of hap
- 6 6 6 slices white cheddar
- 8 8 8 strips cooked bacon
- 3 3 3 oz baby spinach
- 2 2 2 Tbsp melted butter
- 1 1 1 tsp black pepper
Rice and Bean Freezer Burritos

Mash beans in a large bowl with chili powder and cumin until almost smooth
- 2 - 15 oz cans black or pinto beans, rinsed and drained
- 4 Tsp chili powder
- 1 tsp ground cumin
- 2 c shredded sharp Cheddar cheese
- 1 c chopped grape tomatoes
- 4 scallions, chopped
- 1/4 c chopped pickled jalapeños
- 2 Tbsp chopped fresh cilantro
- 8 - 8-inch tortillas, at room temperature (They turned out pretty small, consider using larger tortillas)
- 2 c cooked brown rice
Carbonara with Sausage & Mushrooms

Bring a pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 1 pound ziti or penne rigate
- 1/4 cup EVOO
- 1/2 pound sweet italian sausage
- 1/2 pound crimini mushrooms, thinly sliced
- 1/4 cup sherry or marsala
- 2 tablespoons chopped fresh thyme
- 1/4 pound pancetta, finely diced
- 4 cloves garlic, chopped
- 1/2 cup dry wine wine
- 4 large egg yolks
- A couple generous handfuls grated pecorino-romano, plus more for topping
- 1/4 cup chopped flat-leaf parsley
Lemon Lush

Mix together crust ingredients and spread into the bottom on a 9x13" baking dish
- Crust:
- 1 stick margarine
- 1 c all purpose flour
- 1/2 c chopped pecans
- Middle Layer:
- 1 c powdered sugar
- 8 oz softened cream cheese
- 1 c Cool Whip, plus more to "frost"
- Top Layer:
- 2 small pkgs lemon instant pudding
- 3 c milk
Oatmeal Cake

Place boiling water, oats and butter in a mixing bowl
- Cake:
- 1-1/4 c boiling water
- 1 c quick cooking oats
- 1 stick butter
- 1 cup granulated sugar
- 1 c brown sugar
- 2 eggs
- 1-1/2 c sifted flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp salt
- Frosting:
- 2 - 3 oz pkgs cream cheese
- 3 c powdered sugar
- 1 c nuts (or coconut) in or on top
- 1 stick butter
- 1 tsp vanilla
