Mediterranean Chicken Salad Pitas

Place pitas in a stack in 350 oven to warm
- 4 pocketless pitas
- 3 c Pulled Chicken
- 1 c Roasted Peppers, chopped
- 1 large tomato, seeded and diced
- 1 cucumber - peeled, seeded and diced
- 1/4 c minced red onion
- 2 Tbsp EVOO
- 1 Tbsp red wine vinegar
- salt and pepper
- 4 romaine lettuce leaves
Asparagus Risotto

In a medium saucepan, bring the stock, saffron and 1 c water to a simmer over medium
- 1 qt chicken stock
- A fat pinch of saffron threads
- 2 Tbsp olive oil
- 1/4 lb pancetta, diced
- 1 onion, finely chopped
- 2-3 large cloves garlic, finely chopped
- 1 bundle asparagus (about 1 lb) - tough ends trimmed and stalks thinly sliced on a sharp angle, leaving 1 inch of the tip intact
- 1-1/4 c arborio rice
- Salt and pepper
- About 3/4 c dry white wine
- 2 Tbsp butter
- About 1/2 c freshly grated Parmigiano-Reggiano, plus more to pass at the table
Ruby Red Beet & Apple Salad

Scrub beets and trim tops to 1 inch
- 2-1/2 lbs fresh beets (about 8 medium)
- 2 medium apples, peeled and chopped
- 1 c chopped fresh kale (I used Romaine lettuce)
- 1 c chopped red cabbage
- 1 c shredded carrots
- 1/2 c chopped onion
- 1/2 c cider vinegar
- 1/3 c olive oil
- 2 Tbsp honey
- 1 tsp salt
- 3/4 tsp curry powder
- 1/8 tsp each ground ginger, garlic powder and pepper

- 1/2 teaspoon ground black pepper
- 4 onion buns
- 4 leaves butter lettuce
- 4 slices tomato
- 4 slices red onion
- For Sauce:
- 1/2 cup ranch dressing
- 1 tablespoon hot sauce

Lazy Baked Greek Chicken

- 1/2 medium onion, finely chopped
- 3 cloves garlic, finely chopped
- One 10 oz box frozen chopped spinach, thawed
- Salt and pepper
