- 1/4 c water
- 1/4 c sugar
- 2 sprigs fresh mint
- 3 Tbsp rice vinegar
- 1 Tbsp orange zest
- 1/4 tsp kosher salt
- 3 Tbsp olive oil
- 2 Tbsp chopped fresh basil
- Bibb lettuce leaves
- 1 Granny Smith apple, quartered and thinly sliced
- 1 English cucumber, thinly sliced
- 2 navel oranges, peeled and sliced
- 2 c fresh blueberries
- 1 c halved fresh strawberries
- Garnish: fresh mint
Liverwurst Spread

Mix well and refrigerate. Serve with crackers
- 1 small tube liverwurst
- Worcestershire sauce
- 1 pkg Lipton onion soup mix
- 8 oz cream cheese
Italian Pasta Salad

Combine all ingredients. Add dressing as needed
- 7 oz corkscrew pasta, cooked
- 1-1/2 c cubed Swiss cheese
- 6 oz sliced Genoa salami - strips
- 1 c thinly sliced cauliflower
- 1 c sliced zucchini
- 1/2 c chopped green pepper
- 1 small onion, thinly sliced
- 2 medium tomatoes, added when ready to serve
- 1/2 c sliced black olives
- 1/4 c shredded Parmesan cheese
- 1/4 c chopped parsley
- 1/4 c vinegar - add a little sugar to taste - 3 Tbsp)
- 2 garlic cloves, minced
- 2 tsp dry basil
- 1 tsp oregano
- 1/2 tsp pepper
- 3/4 c Hendrickson's Original Sweet Vinegar & Oil Dressing, Fat Free
- (The recipe call for only 3/4 cup, but we usually use the whole bottle.)
Lime Rickey Chicky and Buttered Almond Rice

In a small bowl, mix together the honey, lime juice and bitters and stir to dissolve the honey
- 1/4 c honey
- Juice of 2 limes, plus wedges for serving
- 1 Tbsp bitters, such as Angostura
- 2 Tbsp vegetable oil
- 1-1/2 los chicken cutlets or tenders, sliced into thin strips
- 2 bunches scallions, sliced on an angle into 2-inch pieces
- Salt and pepper
- 1/2 c fresh or frozen green peas
- 2 Tbsp chopped fresh cilantro
- One 6-oz box rice pilaf mix, prepared according to package directions (I used 2 boxes)
- 1/4 c blanched almonds, toasted

Heat 1 tablespoon olive oil in a large skillet over medium-high heat
- 2 1/2 tablespoons extra-virgin olive oil, plus more for greasing
- 1 1/2 pounds uncooked sweet or spicy Italian sausage
- 1 cup milk
- Salt
- 1 cup instant polenta
- 1 cup freshly grated Parmesan cheese
- 1 garlic clove, sliced
- 1 pound broccoli, trimmed and cut into 2-inch florets (about 4 cups)
- Crushed red pepper flakes, to taste
