Asian Cucumber Salad

Place the cucumbers, red onion and red bell pepper in a large bowl
- Dressing:
- 3 c cucumbers peeled, seeded and sliced
- 1/4 c red onion, thinly sliced
- 1/2 c red bell pepper, chopped
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 Tbsp toasted sesame oil
- 2 tsp honey
- 2 Tbsp chopped cilantro or sliced green onion
- 1 Tbsp sesame seeds
- salt and pepper to taste
Banana Walnut Bread

Sift the flour, baking soda and salt into a medium bowl, set aside
- 1-1/4 c all-purpose flour
- 1 tsp baking soda
- 1/2 tsp fine salt
- 2 large eggs, at room temperature
- 1/2 tsp vanilla extract
- 1/2 c unsalted butter, at room temperature, plus more for preparing the pan
- 1 c sugar
- 3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
- 1/2 c toasted walnut pieces (I didn't use them)

Preheat oven to 350º. In a large bowl, cream butter and sugars until light and fluffy
- 1 c butter, softened
- 1 c sugar
- 1 c packed brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1-1/2 c all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 c miniature pretzels, broken
- 1-1/2 c flaked coconut

- 1/4 c fresh lime juice, plus 4 lime wedges

- 4 sweet Italian sausages (1 lb total)
- 1 bag ( 8 oz) mini multicolored bell peppers
- 4 oz pancetta, chopped
- 1 onion, cut into thin wedges
- 2 cloves garlic, sliced
- 1 Tbsp chopped fresh rosemary
- 2 cans (15 oz each) cannelloni beans, rinsed
- 1 can (15 oz) tomato sauce
- 1/2 c breadcrumbs
