Pork Cutlets with Rosemary Dijon Sauce

- 1-1/2 lbs pork tenderloin, trimmed

- 1/3 c chili sauce (such as Heinz)
- 1 Tbsp plus 1 tsp red wine vinegar
- 1 Tbsp yellow mustard
- 2 tsp Worcestershire sauce
- 1 (16 oz) can chili beans (do not drain)
- Corn chips, shredded cheddar cheese, sour cream and/or sliced scallions, for topping

PENNE AVVOCATO

Bring a large pot of water to a boil, salt it, add the pasta and cook to al dente
- Salt and black pepper
- 1 pound penne pasta
- 1/4 cup extra virgin olive oil (EVOO)
- 4 canned anchovy fillets
- 4 cloves garlic, grated or finely chopped
- 1/2 teaspoon crushed red pepper
- 3/4-1 pound swordfish steak, trimmed and chopped into small, bite-size pieces
- 1/2 cup dry white wine
- 1 can tomatoes (28 ounces), preferably San Marzano
- 3 tablespoons capers, drained
- 1/2 cup basil leaves, torn
- 1/3 cup flat leaf parsley, chopped (a generous handful)
Mexican Chicken or Fish

Position a rack in the center of the oven and preheat to 450º
- SPICE BLEND:
- 1 tsp granulated garlic or garlic powder
- 1 tsp granulated onion or onion powder
- 1 tsp dried oregano, preferably Mexican
- 1 tsp ancho (mild) or chipotle (hot) chile powder
- Salt and pepper
- CHICKEN OR FISH:
- 4 pieces (6 - 8 oz each) boneless, skinless chicken breast or thick whitefish fillet (such as cod or pollock)
- Olive oil, for liberal drizzling
- 2 tomatoes, thinly sliced
- 2 cloves garlic, thinly sliced
- 2 jalapeños, thinly sliced
- Queso fresco crumbles and a handful of cilantro leaves, for garnishing
- AVOCADO SALAD:
- 2 avocados, diced
- 1 lime, juiced
- Salt and pepper
- 2 c chopped romaine lettuce
- EVOO, for drizzling
