Good Eats Roast Turkey

2 to 3 days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F
- For the brine:
- 1 (14 to 16 pound) frozen young turkey
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1 gallon vegetable stock
- 1 tablespoon black peppercorns
- 1 1/2 teaspoons allspice berries
- 1 1/2 teaspoons chopped candied ginger
- 1 gallon heavily iced water
- For the aromatics:
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 cup water
- 4 sprigs rosemary
- 6 leaves sage
- Canola oil
- I used Tyler Florence's Sage Butter under the skin, too.
- Sage Butter:
- 2 sticks butter, softened
- 1/4 c chopped sage
- salt & pepper
Southwestern Salad

Salad: On a large platter, layer lettuces, chicken, beans, and remaining 4 ingredients
- Salad:
- 1 Head iceberg lettuce, chopped
- 1 (10 oz) bag, chopped romaine lettuce
- 1 rotisserie chicken, meat shredded and skin and bones discarded (about 4 cups of meat)
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can yellow whole kernel corn, rinsed and drained
- 1 large red tomato, seeded and diced
- 1 (8 oz) pkg shredded Cheddar cheese
- 2 Tbsp diced black olives
- Spicy Ranch Dressing:
- 1 c buttermilk
- 1 c mayonnaise
- 1 (1 oz) package ranch dressing mix
- 2 Tbsp finely chopped red bell pepper
- 1 Tbsp chopped fresh cilantro
- 1 small jalapeño, seeded and finely chopped
- 1 tsp ground black pepper
- 1/2 tsp hot sauce
Chili Corn Bread Salad

Prepare corn bread batter according to package directions
- 1 pkg (8-1/2 oz) corn bread/muffin mix (plus ingredients to make it)
- 1 can (4 oz) chopped green chilies, undrained
- 1/8 tsp ground cumin
- 1/8 tsp dried oregano
- 1 pinch rubbed sage
- 1 c mayonnaise
- 1 c sour cream
- 1 envelope ranch salad dressing mix
- 2 cans pinto beans, rinsed and drained
- 2 cans whole kernel corn, drained
- 3 medium tomatoes, chopped
- 1 c green pepper, chopped
- 1 c chopped green onions
- 10 bacon strips, cooked and crumbled
- 2 c shredded cheddar cheese
Key West Ketchup

In a food processor or blender, combine the ketchup, preserves, honey, soy sauce and curry powder or ginger
- 1-1/2 c ketchup
- 1 c apricot preserves
- 2/3 c honey
- 2 Tbsp soy sauce
- 1/4 tsp mild curry powder or ground ginger
Kiwi, Goat Cheese & Toasted Pecan Salad

Mash 1/2 cup cubed kiwis with fork; press pulp through fine-mesh sieve set over bowl to extract 2 tbsp
- 8 kiwis, peeled and cubed
- 1/4 cup EVOO
- 1 tablespoon white balsamic vinegar
- salt and pepper
- 10 ounces field greens
- 4 ounces goat cheese, crumbled
- 1/2 cup pecans, toasted
Chicken and Pot Pie Soup (with noodles)

In a large pot, cook carrot, celery, onion and garlic in hot butter about 5 minutes or until tender
- Biscuits:
- 1/2 c chopped carrot
- 1/2 c chopped onion
- 2 cloves garlic, minced
- 1 Tbsp butter
- 4 c chicken broth
- 2 c chopped cooked chicken breast
- 2 c dried medium egg noodles
- 1/2 tsp seasoned salt
- 1/2 tsp dry mustard
- 1/2 tsp chili powder
- 1/2 tsp ground black pepper
- 1/4 tsp curry powder
- 1 c half-and-half or light cream
- 1 Tbsp all-purpose flour
- 1 c chopped fresh broccoli
- 1/3 c frozen peas
- 1 recipe Quick Biscuits (recipe below)
- 2 c all-purpose flour
- 4 tsp baking powder
- 4 tsp sugar
- 1/2 tsp cream of tartar
- 1/2 c butter
- 2/3 c milk
Vidalia Onion Barbecue Sauce

Stir together all ingredients and 1/2 cup water in a large saucepan; bring to a boil over medium heat
- 1 medium-size sweet onion, finely chopped
- 1 cup ketchup
- 2 tablespoons firmly packed brown sugar
- 2 tablespoons fresh lemon juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Sage & Prosciutto Chicken Saltimbocca Recipe

Place 1/2 cup flour in a shallow bowl; set aside
- 1/2 cup plus 2 teaspoons all-purpose flour, divided
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 fresh sage leaves
- 8 thin slices prosciutto or deli ham
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 cup chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons white wine or additional chicken broth
- Lemon slices and fresh sage, optional

Preheat oven to 375 degrees
- 4 boneless skinless chicken breasts - thin
- 4 garlic cloves, minced
- 4 Tbsp brown sugar
- 3 tsp olive oil
- 1 tsp salt
- 1 cup cheese
