1. Adjust oven rack to middle position and heat oven to 350 degrees
- 1 3/4 cups (8 3/4 ounces) unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon table salt
- 6 large very ripe bananas (about 2 1/4 pounds), peeled (see note)
- 8 tablespoons (1 stick) unsalted butter, melted and cooled slightly
- 2 large eggs
- 3/4 cup (5 1/4 ounces) packed light brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup walnuts, toasted and coarsely chopped (optional)
- 2 teaspoons granulated sugar

- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1 garlic clove, chopped
- 1 (14 1/2 ounce) can can Italian-style diced tomatoes, drained
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 2 1/4 cups shredded sharp cheddar cheese

- 2 Tbsp. cream
- 1/2 tsp. salt
- 1/2 tsp. vanilla extract
- Butter
- For Chocolate Mousse:
- 1/2 pint cold low-sugar whipping cream
- 1 tsp. vanilla extract
- 4 oz. dark chocolate (85% or greater),
- finely chopped
- 8 oz. cream cheese, softened
- 1/2 cup sour cream
- 1 tsp. instant espresso powder
- If you would like the crêpes a little sweeter, add 1 tsp. xylitol.
- If you would like the chocolate mousse a little sweeter, add 2 Tbsp. xylitol.
