- 3-4 avocados
- 2 roma tomatoes, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- 3-4 cloves of garlic, chopped
- Juice from 1 lemon
- 1 tbsp maca
- 1 tsp kalahari salt
- Panca chili pepper powder, to taste

1. Hollow out melon: Scoop out watermelon until only pale green interior shows; refrigerate shell
- 1/2 large seedless watermelon
- 1 (12-ounce) can frozen pink lemonade concentrate
- 1 (6-ounce) can frozen limeade concentrate
- 5 cups chilled seltzer
- 1 lemon or lime, sliced thin
- 1 pint lemon sherbet or lime sherbet
Peruvian Roast Chicken with Garlic and Lime

1. Process all ingredients except chicken in blender until smooth paste forms, 10 to 20 seconds
- 3 tablespoons extra-virgin olive oil
- 1/4 cup lightly packed fresh mint leaves
- 2 tablespoons kosher salt
- 6 medium garlic cloves, peeled and roughly chopped
- 1 tablespoon ground black pepper
- 1 tablespoon ground cumin
- 1 tablespoon sugar
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- 2 teaspoons finely grated zest and 1/4 cup juice from 2 limes
- 1 teaspoon minced habanero chile (see note)
- 1 (3 1/2-to 4-pound) whole chicken

- 1 3/4 cups plus 1 teaspoon sugar
- 1 tablespoon grated lemon zest and 3 tablespoons juice from 1 lemon

- 8 tablespoons (1 stick) unsalted butter, melted and cooled slightly

- 1/4 cup slivered almonds
- 2 tablespoons wheat germ
- 2 tablespoons unsweetened almond milk or skim milk
- 2 teaspoons honey
- 1 cup ice cubes
