Peanut Butter Chocolate Eclair Dessert

Pour milk into large bowl
- 1 3/4 cups cold milk
- 1 pkg. Jell-O vanilla instant pudding mix
- 1/4 cup creamy peanut butter
- 1 (8 oz.) tub Cool Whip, thawed
- 24 graham crackers
- 6 squares baker's semi-sweet baking chocolate
- 3 T. butter
Triple Chocolate Chunk Muffin

Preheat oven to 350 degrees
- 1 3/4 c oats
- 3 egg whites
- 3/4 cup unsweetened cocoa
- 1/2 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
- 1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
- 1-1/2 tsp. baking powder
- 1-1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup hot water
- 1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
- 1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)
Strawberry Cheesecake Crepes

- 2 1/2 cups sliced strawberries
- 2 tablespoons granulated sugar substitute (or 3 packets)
- 1/2 cup low-fat cottage cheese
- 1/4 cup light tub-style cream cheese
- 1 1/2 tablespoons granulated sugar substitute (or 2 packets)
- 3/4 light whipped topping, thawed
- 8 (9-inch) crêpes
- Powdered sugar, for garnish

- 1 packet Crystal Light Lemonade powdered drink mix - the size that makes one pitcher
- One 12-ounce container Cool Whip

- 8 oz Cottage Cheese
- 2 Eggs, beaten
- 4 tablespoons Splenda
- 2/3 cup Fat Free Milk
- 4 tablespoons Flour
- 3 tablespoons Butter, melted
Pumpkin Cake

Beat all ingredients together and pour into greased 9x13” pan
- 1 can pumpkin
- 4 eggs
- 13 oz. can evaporated milk
- 1 1/2 cups sugar
- 2 t. cinnamon
- 1 t. ginger
- 1/2 t. nutmeg
Zucchini Chips

These zucchini chips are the perfect snack if you’re craving something salty, and they taste great by themselves,
- Optional Seasonings:
- 2 Large zucchini, sliced into 1/4 inch disks
- 1/4 cup Dry breadcrumbs
- 1 1/4 cup
- Grated fresh parmesan cheese (or grated asiago cheese)
- 2 Egg whites
- 1/4 tsp Seasoned salt
- 1/4 tsp Garlic powder
- 1/8 tsp Freshly ground black pepper
- 1/4 teaspoon of any of the following: dried onion powder, oregano, Mrs.Dash seasoning, Cajun seasoning, Stevia, parsley, or basil
- 1 I like Panko, but you could make your own ‘fiber one’ breadcrumbs or use whatever type of bread crumbs you like
