Apple Pie in a Jar

6 medium apples (choose a crisp variety like McIntosh or Empire) 2 tablespoons fresh squeezed lemon juice 2 table...
- makes six half-pint servings
- for the crust
- 1 cups plus 1 tablespoon unbleached all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 6 tablespoons cold butter
- 1/4 cup ice water
- Combine the flour, salt, and sugar in the bowl of a food processor. Cut the cold butter into small bits, add it to the flour mixture and and pulse several times. Drizzle in ice water, pulsing 4 or 5 times, just until dough is combined.
- Place the dough on a lightly-floured surface and gather into a ball. Flatten the dough into a disc, and wrap tightly with plastic wrap. Chill in the fridge for at least 30 minutes. Meanwhile prepare the filling

- 3/4 pound lean ground beef
- 1 (16 ounce) jar spaghetti sauce
- 1 pound spaghetti
- 1 cup shredded mild Cheddar cheese
Cheesy Potato Pancakes

Place grated potatoes between several sheets of paper towels, press to remove some of the moisture
- 1 cup red potatoes, grated with a cheese grater
- 1 egg
- 1 tbs masa (corn flour used to make corn tortillas)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp onion powder
- pinch cayenne

- 1/4 cup cheddar cheese, shredded (if using pre shredded, check to make sure it does not contain gluten)

Preheat the oven to 350F. If you're using paper pans (like I did) there's no need to grease them
- 2 1/4 cups (270 grams) all purpose flour
- 2 tsp baking powder (8 grams)

- 1/4 tsp nutmeg
- 1 cup (200 grams) sugar
- 2 eggs
- 1 cup (240 ml) eggnog
- 1/2 cup (113 grams) melted butter
- 1 tsp vanilla extract

- 1 stick of unsalted butter, melted (I only had salted on hand, and it worked just fine)
- 2/3 cup granulated sugar

- 1 cup apple cider-not apple juice
- 1/2 cup chicken broth
- 2 large onions, roughly chopped
- 1/2 tsp nutmeg
- 1 tbsp garlic, minced
- 1 tbsp fresh rosemary, minced
- 2 bay leaves
- 4 sweet potatoes, peeled and cut into quarters
- 1 tbsp olive oil
- 3 tbsp butter (1 to sauté, 2 for the crockpot)
- 1 tbsp kosher salt
- 1 tsp ground black pepper
