Scrambled Eggs with Dandelion Greens and Goat Cheese

- 1 lb dandelion greens, ends trimmed
- 8 large eggs
- 1/2 lb fresh goat cheese, crumbled
- 1/4 tsp kosher salt
- 1/4 C extra-virgin olive oil
- 1 medium onion, thinly sliced
- 1/8 tsp crushed red pepper flakes

- 1 C (10 oz) thawed frozen sweet raspberries
- Syrup from above, plus water to equal 2-1/2 C
- 2 3-oz packages raspberry gelatin
- 1 8-oz can of whole cranberry sauce (3/4 c)
- 1 Tbsp grated orange zest
- 8 oz cream cheese
- 1/2 C sugar
- 1 C undiluted evaporated milk
- 1 tsp vanilla extract
- 1 envelope unflavored gelatin
- 1/2 C cold water
- 1/2 C chopped walnuts (optional) (but, as usual, I don't bother with the nuts)
Slow Cooker Saucy Chicken over Rice

- 6 skinned chicken drumsticks (about 1-3/4 lbs)
- 1 tsp canola oil
- 1/3 C finely chopped onion

- 16 Tbsp butter, plus more for greasing (Recipe doesn't specify, but I use unsalted butter)
- 4 oz unsweetened chocolate
- 2 C sugar
- 2 eggs, beaten
- 1-1/2 tsp vanilla extract
