Ingredients

  • 1/4 C loosely packed whole fresh flat-leaf parsley leaves
  • 1/4 C loosely packed whole fresh cilantro leaves
  • 2 Tbsp orange juice
  • 2 tsp extra-virgin olive oil
  • 2 tsp lime juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • Pinch cayenne
  • 3 ripe peaches, pitted and cut into wedges
  • 2 large tomatoes, cored and cut into wedges
  • 1/2 small red onion, thinly sliced
  • 1/2 ripe avocado, pitted, peeled and diced

Step 1

1. For vinaigrette, combine parsley, cilantro, orange juice, oil, lime juice, honey, salt, black pepper, and cayenne in mini food processor and puree.

2. Arrange peaches, tomatoes, and onion on platter; sprinkle with avocado. Drizzle with vinaigrette and serve at once.
