Marinara Sauce

In the 4-quart Stockpot (4 L utensil) sauté onion in olive oil over medium heat until tender, 5-7 minutes
- 2 tablespoons olive oil
- 1/2 cup onion, chopped #2 blade
- 1 12-ounce tomato paste
- 1/2 cup red wine
- 5 cups water
- 1 tablespoon dried basil, or fresh, chopped
- 1 tablespoon oregano dried, or fresh, chopped

- 1 14.5 ounces can diced tomatoes, or 2 pounds plum tomatoes, peeled, seeded and chopped

Lentil Soup

Lentils are so packed with nutrition
- 2 Tablespoons olive oil
- 1 medium onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 garlic cloves, chopped
- Salt and pepper
- 28 oz can crushed tomatoes
- 1 lb. lentils (about 1 1/4 cup) of any variety
- 11 cups low sodium chicken broth, or to the line of pressure cooker
- 4 to 6 fresh thyme sprigs
- 2/3 cup dried elbow pasta
- 1 cup shredded parmesan cheese
Beef Jerky - Brian's Favorite

- 5 pounds beef brisket or London Broil
- 20 ounces Soy Sauce
- 15 ounces Lea & Perrins Worcestershire Sauce
- 20 ounces Teriyaki sauce
- 1/4 cup Dark Brown Sugar
- 1/4 cup Garlic Powder
- 1/4 cup Onion Powder
- 2 teaspoons Cayenne Pepper
- 5 ounces Liquid Smoke flavoring, Hickory Smoke is best
- 1/2 cup Molasses
Creamy Cauliflower & Split Pea Soup with Toasted Hazelnuts

1. Melt butter in a Dutch oven or large saucepan
- 1 Tbsp. unsalted butter
- 3/4 cup chopped shallots
- 1/2 cup sliced celery
- 31/2 cups low-sodium vegetable stock or broth
- 1 cup dried split peas, rinsed and drained
- 4 cups coarsely chopped cauliflower
- (about 1/2 large head)

Beef, Vegetable and Barley Soup

1. Remove excess fat and silver skin from roast
- 1 (3- to 4-lb.) beef roast, boneless or bone-in
- 1/2 cup oil
- 2 cups onions, cut into 1-inch cubes
- 2 cups carrots, cut into 1-inch cubes
- 1 cup celery, cut into 1-inch cubes
- 4 tomatoes, stems removed, cut into 1-inch cubes or
- 1 (16-oz.) can diced tomatoes
- 1 1/2 cups pearl barley
- 3 bay leaves
- 1 teaspoon freshly ground pepper
- 2 teaspoons dried thyme
- 1 small head cabbage, cut into 1-inch cubes (about 6 cups)
- 1 1/2 cups ketchup
- 1/4 cup Worcestershire sauce
- 1 gallon water
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground pepper
