Homemade Vegetable Soup

- 2 cups chopped baby carrots
- 2 baking potatoes, cut into cubes
- 1 small sweet onion, chopped
- 2 stalks celery, chopped
- 1/2 small head cabbage, chopped
- 1 (28 ounce) can diced tomatoes
- 2 cups cut fresh green beans (1/2 inch pieces)
- 1 32 ounce carton (or 3 10 1/2 ounce cans) chicken broth
- 2 14 ounce cans (or 1 32 ounce carton) vegetable stock
- 2 cups water
- 1 1/2 teaspoons dried basil
- 1 pinch rubbed sage
- 1 pinch dried thyme leaves
- salt to taste (if desired)

In a shallow dish, combine flour, parsley, and salt; mix well

Herb Roasted Pork

Directions Preheat oven to 325 degrees F (165 degrees C)
- 1 teaspoon rubbed sage
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 clove garlic, crushed
- 1 (5 pound) boneless pork loin
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/4 cup Balsamic vinegar
- 1/4 cup water
- 2 tablespoons soy sauce
Lemon Dill Egg Salad

Directions Toss all ingredients together and chill for at least 1 hour
- 6 hard cooked eggs, chopped
- 2 green onions, finely chopped
- 1 stalk celery, chopped
- 2 strips bacon, crisply cooked and crumbled
- 1/2 C. red bell pepper, chopped
- 1/2 tsp. lemon pepper
- 1 tsp. dried dill weed
- 3/4 C. reduced fat ranch salad dressing
Caramel Upside Down Cake

- 1 1/2 Granny Smith Apples (or other tart baking apples ; peeled, cored and sliced)
- 1/4 cup + 6 tablespoons Unsalted Butter
- 3/4 cup Brown sugar
- 2 Eggs
- 8 tblspoons Buttermilk
- 1/2 teaspoon Vanilla extract
- 1 cup All purpose flour
- 3/4 cup Sugar
- 3/4 teaspoon Baking powder
- 1/4 teaspoon Baking soda
- 1/4 teaspoon Salt
Braised Pork with Peppers and Onions

Cook vegetables in oil until soft
- 4 cloves garlic, thinly sliced
- 1/2 cup dry red4 boneless pork loin chops, about 1-inch thick, trimmed
- 2 teaspoons olive oil
- Salt and black pepper
- 1 tablespoon tomato paste
- 2 small red bell peppers, or yellow bell peppers, quartered and cut into 1/4-inch slices
- 1 small red or yellow onion, quartered and cut into 1/4-inch slices
- SAVE NOW wine, (for non-alcoholic, substitute chicken or vegetable broth)
