- ◦1/4 to 1/2 cup buttermilk
- ◦1 small bunch of chives
- ◦Small handful of parsley
- ◦1 clove garlic
- ◦1/2 tsp salt
- ◦1/4 tsp white pepper
Mini Pumpkin Cheesecakes

1. Preheat oven to 350°F
- 20 gingersnap cookies
- 2 tablespoons butter, melted
- 1 package (8 oz) cream cheese, softened
- 1/2 cup packed brown sugar
- 1/2 cup canned pumpkin (not pumpkin pie mix)
- 1 tablespoon sour cream
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- Whipped cream, if desired
- Caramel sauce, if desired
Mexican Tortilla Soup

Season the chicken with salt and pepper and set aside
- 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon olive oil
- 1 cup diced yellow onion
- 1/2 cup diced green bell pepper
- 1 tablespoon minced garlic
- 1/2 small jalapeño, stemmed, seeded, and finely chopped (about 2 teaspoons)
- 4 1/2 cups reduced-sodium chicken broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 3 tablespoons fresh lime juice
- 1 tablespoon chopped fresh cilantro, plus extra for garnish
- 1 cup chopped tomatoes (2 to 3 small Roma tomatoes)
- Crushed tortilla chips
- 1 ripe avocado, peeled, pit removed, and diced (optional)
- Sour cream (optional)
- Cheddar cheese, grated (optional)
Tartar Sauce

mix all ingredients together in the food processor
- 1-1/4 cups Mayonnaise of Miracle Whip.
- 1 medium dill pickles (or 1/4 cup dill relish).
- 2 springs prasley.
- 1 tbsp. fresh lemon juice.
- 1 tbsp. dried onion flakes (or fresh).
- 14 teaspoon worcestershire sauce.
Cream of Cauliflower and Cheddar Soup

Melt butter in large saucepan; sauté onion until tender
- 2 tbsp (30 mL) butter
- 1/2 cup (125 mL) chopped onion
- 3 cups (750 ml) coarsely-chopped fresh cauliflower
- 1 can (10 oz/284 mL) condensed chicken broth
- 1/4 cup (60 mL) all-purpose flour
- 2 1/2 cups (625 mL) milk
- 1 1/2 cups (375 mL) shredded Cheddar cheese
- Salt and pepper, to taste
- Buttered Croutons
- Chopped parsley

- 1 cup of white sugar
- 1 cup of water
- A stick of butter (four ounces) cut into a few pieces
- 1 cup of cream
- A dribble of vanilla
