Soft Pretzels

In the bowl of a stand mixer fitted with the dough hook, combine all ingredients for the dough
- Dough:
- 1 package rapid-rise yeast
- 1/4 cup honey
- 1 tsp salt
- 3 cups bread flour (16 1/2 ounces)
- 1 cup water, at approximately 110 degrees
- Approximately 1 T olive oil
- Baking Soda Solution:
- Approximately 6 cups water
- 3 T baking soda
- Salt for sprinkling on pretzels
CHICKEN AND GREEN BEAN CASSEROLE

Prepare stuffing as directed on package
- 1 package (6 ounces) boxed stuffing mix for chicken
- 1 tablespoon margarine
- 6 small boneless skinless chicken breast halves (1 12/ pounds)
- 1/2 teaspoon black pepper
- 1/2 pound fresh green beans, trimmed, but into 1 inch lengths
- 1 package (8 ounces) fresh mushrooms
- 1 large onion, chopped
- 1/4 cup flour
- 1 3/4 cups fat-free reduced sodium chicken broth
- 4 ounces (1/2 of 8 ounce package) cream cheese, cubed
Cilantro Butter

Combine the butter, garlic, cilantro and 1 teaspoon lime juice in a food processor or with a mixer until smooth
- 1 stick unsalted butter, slightly softened
- 6 cloves garlic, coarsely chopped
- 1/4 cup fresh cilantro leaves
- 1 to 2 teaspoons fresh lime juice
- Kosher salt and freshly ground pepper

Combine ingredients and whisk together on the stove
- 1 cup non-dairy milk (at least 1/3 cup as lite or full-fat canned coconut milk if you want a truly-rich treat)
- 2 T cocoa powder (10 grams)
- scant 1/16th tsp salt (do not omit this)
- 1/2 tsp nunaturals stevia or 1 tablespoon agave, maple syrup, or sugar (or more, if you have a sweet tooth)
- Optional: for an even richer flavor, try adding a little melted chocolate (Serendipity’s recipe calls for this) or chocolate syrup

- Red chili:
- 5-6 Tblsp of chili molido (New Mexico red chili powder)
- 1 lb hamburger
- 1-2 Tblsp flour
- 2-3 cloves garlic (smashed and minced)
- 1 cube chicken and tomato bullion
- 1 lb of chedder cheese
- pinches of salt here and there to taste
- 12 corn tortillas (yellow or white)
- Vegetable oil for frying tortillas and eggs
- 1 med diced white onion
