Roasted Carrot and Basil Soup with Grilled Cheese Dunkers

Preheat the oven to 375 degrees F
- Grilled Cheese Dunkers:
- 2 pounds carrots, washed and cut into chunks
- 1/2 large Vidalia onion, cut into chunks
- 4 cloves garlic, unpeeled
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 5 cups chicken broth
- 1/4 cup chopped fresh basil
- Sour cream or Greek yogurt, for topping, optional
- Grilled Cheese Dunkers, for serving, recipe follows
- 1 1/4 cups shredded extra-sharp Cheddar
- 8 slices nice sourdough bread, quartered and crusts removed
- Mayonnaise, for spreading
Burgundy Mushrooms

Thoroughly wash the mushrooms and throw them into a large stockpot
- 4 pounds white button mushrooms
- 1 litre Burgundy wine (other dry red wines will work)
- 2 cups boiling water
- 1/2 pound (2 sticks) butter
- 1 1/2 teaspoons Worcestershire sauce
- 1 teaspoon dill seed
- 1 teaspoon freshly ground black pepper
- 4 beef bouillon cubes
- 4 chicken bouillon cubes
- 4 cloves garlic, peeled
- Salt
- Crusty bread, for serving
Cheesy Manicotti

Preheat the oven to 350 degrees F
- Nonstick cooking spray
- One 8-ounce package manicotti
- One 15-ounce container ricotta cheese
- 3 cups shredded mozzarella
- One 10-ounce package frozen chopped spinach, thawed and squeezed dry
- 1 teaspoon dried Italian seasoning
- 2 large eggs, scrambled
- Pinch of salt and pepper
- One 25-ounce jar tomato and basil pasta sauce
- 1 cup shredded provolone

Strawberry and Cream Ice Cream Jamie Deen

Add the strawberries to a bowl along with the lemon juice and 1/4 cup of the sugar
- 22 ounces strawberries, stems removed, sliced
- 1 tablespoon freshly squeezed lemon juice
- 1 cup granulated sugar
- 4 large egg yolks
- 1/4 teaspoon kosher salt
- 1 1/2 cups heavy cream
- 1 1/2 cups whole milk
- 1 vanilla bean, seeds scraped
Pork Chops with Apples and Pancetta

In a large nonstick skillet, heat 2 teaspoons of the oil over medium-high heat
- 5 teaspoons extra-virgin olive oil
- 3 ounces thinly sliced pancetta, coarsely chopped
- 1 tablespoon butter
- 2 large Golden Delicious apples, peeled, cored, cut into 1/2-inch-thick slices (about 3 cups)
- 1/2 teaspoon sugar
- Four 8-ounce bone-in center-cut pork chops (each about 3/4-inch thick)
- 1 1/4 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup heavy whipping cream
- 1/4 cup brandy
- 1/4 cup unsweetened apple juice
- 2 teaspoons chopped fresh thyme

Frozen bread dough is the convenient base for this herb-flavored flat Italian bread
- 1 loaf (1 pound) frozen bread dough, thawed
- 1 tablespoon olive oil
- 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
- 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
- 1 package (8 ounces) PHILADELPHIA Cream Cheese (softened or cubed), softened
- 1/4 cup finely chopped onion
- 1 garlic clove, minced
- 4 large fresh mushrooms, sliced
- 3 medium tomatoes, sliced

- 2 tablespoons finely chopped fresh oregano
- 2 teaspoons fennel seeds, crushed using a mortar and pestle or place in a zip top bag and crush with a rolling pin
- Freshly ground black pepper
- Fondue:
- 1 cup beer, such as a brown ale, pale ale or lager, at room temperature, plus extra, as needed
- 1 tablespoon Dijon mustard
- 2 tablespoons extra-virgin olive oil
- 1 pound sweet Italian sausage, casings removed
- 1 medium onion, chopped (about 1 1/2 cups)
