Beef Stew

This one is a winner
- 3 Tbsp olive oil
- 2 lb cubed beef stew meat (1 1/4")
- 1 med onion, diced
- 3 cloves garlic, minced
- 12 oz beer (pale lager)
- 3 1/2 c beef broth
- 2 Tbsp tomato paste
- 1 Tbsp Worcestershire sauce
- 1 1/2 tsp sugar
- 1/2 tsp paprika
- 8 new potatoes (1 1/2"-2" diameter), quartered
- 4 carrots, sliced diagonally
- 3 Tbsp all-purpose flour
- Finely chopped fresh parsley (optional)
- Crusty bread (optional)
Central New York Chicken BBQ fm Dolly of Middlefield

This is a recipe used by so many in Central New York
- Yield: Enough for 5 pounds of chicken.
- 1 egg
- 1/2 cup vegetable oil
- 1 cup cider vinegar
- 2 teaspoons coarse salt*
- 2 teaspoons poultry seasoning
- 1/4 teaspoon freshly-ground pepper
- Poultry pieces (half chicken, whole chicken, whole chicken legs,
- chicken thighs, and/or chicken breasts)
- Yield: Enough for 10 pounds of chicken.
- Makes about 1 1/2 cups.
- For 10 pounds of Chicken
- 1 egg
- 1 cup vegetable oil
- 2 cups cider vinegar
- 1 tablespoon coarse salt*
- 1 tablespoon poultry seasoning
- 1/2 teaspoon freshly-ground pepper
- Poultry pieces (half chicken, whole chicken, whole chicken legs,
- chicken thighs, and/or chicken breasts)
- Makes about 3 1/4 cups.
ITALIAN BAKE

You can adapt this as you wish
- 3 pounds chicken breasts (cooked & cut into bite size pieces)
- 6 Italian sausage links
- 2 jars or spaghetti sauce (I use Hunt's in the can - cheaper & just as good!) (I add a little oregano, garlic and onion powder)
- 1 pound of pasta, penne, macaroni, shells or what ever you like
- 1 large package of pizza cheese (suggest name brand cheese)
- 1 onion
- 2 large bell peppers - red & green, cut into chunks
Gluten Free Onion Soup Mix

Louise's Veggie Meatloaf

I love the flavor that the onions, celery, and green pepper give this meatloaf
- 2 1/2 pounds ground beef
- 1 medium yellow onion, peeled and finely chopped
- 1 clove garlic crushed
- 2 stalks celery, cut into small pieces
- 1 small zucchini, washed and grated dry with paper towel
- 1/2 green pepper, finely chopped
- 1/2 cup flat-leaf parsley leaves chopped
- 1 large egg
- 1 cup ketchup
- 1 tablespoon salt
- 2 teaspoons freshly ground black pepper
Great Shepard's Pie

Made this tonight, turned out awesome
- 2 lbs ground beef
- 1 med onion chopped
- 1 can of good quality mixed vegetables, drained OR you could use frozen vegetables (peas, carrots)
- 1 can of corn drained
- 6 to 8 button mushrooms, sliced
- 2 tbps of butter
- 1 large jar of Hines savory beef gravy
- 1 tsp salt or to taste
- 1/2 tsp pepper
- Mashed potatoes: (this can vary depending on how you like to make your mashed potatoes.)
- 6 medium potatoes, pealed and thickly sliced (I usually would not use russet potatoes for my mashed potatoes, but only had about half the potatoes I needed of the waxy potatoes and they turned out just fine.)
- 4 tbsp butter
- 1/2 cup of warm milk, more if needed (added slowly as you mash)
- 1 1/2 tsp salt or to taste
- 1/2 tsp pepper
