- 100 g / 3.5oz unsalted butter
- 5 brown / yellow onions, peeled, halved and thinly sliced (750g / 1.5 lb)
- 30 g / 1 oz plain flour
- 1.5 litres / 6 cups / 1.5 quarts chicken or beef broth, low sodium/salt reduced (Note 1)
- Salt and pepper
- 4 - 6 slices French baguette or sourdough bread
- 100 g / 3.5 oz gruyere, emmenthal or comte cheese
- Fresh parsley, for garnish (optional)

My Pasta Fagioli Soup

Makes about 8 servings
- 2 pounds ground beef
- 1 medium onion, chopped (equivalent to 1 cup)
- 1 large carrot, chopped (equivalent to 1 cup)
- 3 stalks celery, chopped (equivalent to 1 cup)
- 1 clove garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 medium can or jar of V8 juice (or one large can tomato sauce)
- 1 can (15 ounces) beef broth
- 1 can (15 ounces) red kidney beans, drained
- 1 can (15 ounces) White Northern beans, drained
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 tsp cayenne pepper
- 1 Teaspoon Chili powder (no more, it is not chili)
- 8 ounces ditalini pasta, precooked weight
Southern Tomato Gravy

This differs from the original recipe
- 2 tablespoons margarine
- 2 tablespoons flour
- 1 onion, cut in slices and slices cut in half sauteed until translucent with the butter or margarine
- 1/2 cup milk or creamer or chicken stock (I prefer the chicken stock)
- 1 teaspoon sugar (optional) I like it savory.
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- pinch cayenne
- 15-ounce can whole tomatoes or whole plum tomatoes squished
Chicken and Broccoli

This is not Chicken Divan; however, it is a nice chicken casserole dish
- 3 cups cubed chicken or chicken strips, or chicken breast cut in half. Do not need to dice up chicken.
- 16 oz (1lb) bag of frozen broccoli
- 1 med onion diced (about 1 cup)
- 2 cups shredded mozzarella cheese (prefer cheddar or fontina)
- 1 tsp garlic powder
- 1 cube chicken bouillon (or 1 tsp bouillon powder)
- 1/2 cup water (optional, I added this to help disperse the chicken flavoring but the water from the veggies as they cook also would suffice if the dish seems too watery to you)
- 1 Tbsp olive oil
- 1/4 tsp pepper (or to taste)
- 1/4 c sour cream (can also add a can of cream of chicken soup)
- 1 cup ricotta
- Bacon Grease
AVOCADO TUNA SALAD

- 1 avocado
- 1 lemon, juiced, to taste
- 1 tablespoon finely chopped onion, to taste (and/or celery finely chopped)
- 5 ounces cooked or canned wild tuna
- sea salt and pepper to taste

Creamy Chicken Marsala
