- 2/3 cup sugar
- 3/4 teaspoon ground cinnamon
- 1/8 to 1/4 teaspoon ground nutmeg
- 6 cups thinly sliced peeled tart apples
- 1/4 cup raisins
- 1-1/2 teaspoons grated lemon peel
- 2/3 cup biscuit/baking mix
- 1/4 cup packed brown sugar
- 1/3 cup butter, melted
- Cheddar cheese slices

- 1 teaspoon Worcestershire sauce
- 1 pinch cayenne pepper, or more to taste
- salt and freshly ground black pepper to taste
- 1 round loaf sourdough bread
- 2 tablespoons shredded white Cheddar cheese

- 6 3/4 cups or 7 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1 tablespoon + 1/2 teaspoon salt
- 1 1/2 tablespoons instant yeast
- 1 3/4 cups lukewarm water
- 4 large eggs
- 1/2 cup honey
- 1/2 cup melted butter or vegetable oil
- See step #1, below.
- 2/3 cup Baker's Cinnamon filling* mixed with 3 tablespoons water
