Simple Tomato Sauce

In a large casserole pot, heat oil over medium high heat
- 1/2 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- Sea salt and freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes
- 4 to 6 basil leaves
- 2 dried bay leaves
- 4 tablespoons unsalted butter, optional
Chipotle Burgers with Avocado Salsa

Directions Preheat an outdoor grill for medium-high heat and lightly oil the grate
- 1 bunch fresh cilantro, chopped
- 1 pound ground beef
- 1 (7 ounce) can chipotle peppers in adobo sauce
- 1 cup chopped fresh mushrooms
- 1 tablespoon Worcestershire sauce
- 1 avocado - peeled, pitted, and diced
- 1 onion, diced
- 1 tomato, diced
- 2 jalapeno peppers, seeded and chopped
- 1 lime, juiced
- salt and ground black pepper to taste
- 4 onion rolls, split
Cannoli

Into a bowl sift together the flour, sugar, and salt
- 1 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 1/8 teaspoon salt
- 1/2 cup dry Marsala or other dry red wine
- Cannoli molds (tubes for shaping shells during frying)
- 2 beaten egg whites
- Vegetable oil, for frying
- 1/2 cup heavy cream
- 1 pound ricotta
- 1/2 cup powdered sugar
- 2 teaspoons nut-flavored liqueur, such as Nocello, Frangelico, or Amaretto
- 1/4 cup finely chopped dates
- 1/2 cup melted semisweet chocolate
- 1/4 cup chopped pistachios

- 1 14-ounce can Ocean Spray® Jellied Cranberry Sauce
- 1 12-ounce bottle Heinz® Chili Sauce
- 1 2-pound bag frozen, pre-cooked, cocktail-size meatballs

- 2 tablespoons dry Marsala wine
- Oil for frying (canola, peanut oils are best)

Fried Tuscan Olives

Directions Add enough oil to fill a large, heavy Dutch oven a third of the way and heat to 350 degrees F
- Canola oil, for deep frying
- 2 links Italian pork sausage, casings removed
- 2 tablespoons freshly grated Parmesan
- 2 tablespoons finely chopped fresh parsley
- Small pinch crushed red pepper flakes
- 40 pitted large green olives
- 1/2 cup all-purpose flour
- Kosher salt and freshly ground black pepper
- 3 large eggs
- 2 cups plain dried breadcrumbs
