Sugared Pecans

1. Preheat oven to 300 degrees
- 3 egg whites
- 2 tablespoons water
- 8 cups pecan halves
- 1-1/2 cups sugar
- 1 Tbsp orange zest
- 1-1/4 tsp salt
- 1 tsp pumpkin pie spice
Dijon Dill Chicken

Preheat oven to 350 degrees
- 1/4 cup Dijon mustard
- 1 Tbsp. honey
- 2 Tbsp. chopped onion
- 1 clove garlic, minced
- 1 tsp. dill weed
- olive oil for cooking
- 4 chicken breasts, skinned
Pear Upside Down Cake

Preheat oven to 350 degrees
- 3 fresh pears, peeled
- 3/4 cup brown sugar
- 1 tsp. pumpkin pie spice
- 1/2 cup dried cranberries
- 1 2-layer pkg. golden yellow cake mix
- 1 pkg. vanilla instant pudding mix
- 4 eggs
- 1 1/4 cups water (milk will make a richer cake)
- 1/4 cup oil
- whipped cream
Lobster

Absolutely delicious. Bring a bib ;)
- As many lobster as you wish (should be lively)
- 3/4 cups coarse salt
- Note: 1 lb. of lobster in the shell yields 1/4 lb. or 2/3 cup of lobster meat.
- Store live lobster in fridge ensuring that bag is open so they don’t suffocate.
Crab Shells

Untried. Hors d'oeuvre..
- 36 jumbo pasta shells
- 2 8-oz. pkgs. Neufchatel cheese
- 1 lb. imitation crab meat
- 6 oz. tiny cooked shrimp
- 1 onion, minced
- 2 stalks celery, chopped
- 1/3 cup mayonnaise
- 2 Tbsp. white sugar
- 1 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1 tsp. lemon juice
Cod au Gratin

Preheat oven to 375*. Place cod in greased gratin dish or individual gratin dishes
- 1 lb cod fillets, cut into cubes
- 1/4 cup butter
- 1/4 cup flour
- 1 1/4 cups milk
- 1 tsp. salt
- Pepper to taste
- 1 small onion, finely chopped
- 1/2 cup breadcrumbs or cracker crumbs
- 1/2 cup cheddar cheese, grated
Sweet and Sour Chicken

Not your typical sweet and sour chicken
- 1 whole chicken, cut up into pieces
- 1/2 cup flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/3 cup shortening
- 1/2 cup white vinegar
- 3 Tbsp. brown sugar
- 1/3 cup chopped sweet pickles
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. ketchup
Barbeque Dry Rub

- 1 cup paprika
- 3 1/2 Tbsp. sugar

Baked Apple Dumplings

For the dumplings, in a large bowl, combine the flour, sugar, baking soda, and salt
- CRUST
- 3 cups all-purpose flour
- 2 tablespoons sugar
- 3/4 teaspoon baking soda
- pinch kosher salt
- 4 1/2 tablespoons vegetable shortening
- 1 cup milk (or just enough to make the dough stick together)
- FILLING
- Juice from one lemon
- 6 extra small baking apples (such as Gala)
- 1/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- Pinch kosher salt
- 2 tablespoons unsalted butter, cut into 6 pieces
- CARAMEL SAUCE
- 2 cups packed brown sugar
- 1 cup water
- 4 tablespoons (1/2 stick) unsalted butter, cubed
- Pinch of kosher salt
- Vanilla ice cream, to serve
Plum and Almond Galette

- TOPPING:
- 1/2 cup slivered almonds, chopped
- 2 Tbsp. butter
- 2 Tbsp. brown sugar
- 1 Tbsp. flour
- 1/2 tsp. ground cinnamon
- GALETTE:
- 5 ripe plums
- 1/4 cup brown sugar
- 1 sheet prepared butter puff pastry, rolled to a 12x12 inch square
- 1 egg yolk
- 1 tsp. coarse sugar crystals
