Strawberry Bread

Stir flour, soda, salt, cinnamon and sugar together in large bowl
- 3 cups flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 2 cups sugar
- 2 - 10oz. pkgs. frozen strawberries - thawed
- 4 well beaten eggs
- 1 1/4 cups oil
- 1 1/3 cups chopped nuts - Walnuts
Lemon-Garlic Shrimp and Vegetables

Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat
- 4 teaspoon oil, olive, extra virgin, divided
- 2 large pepper(s), red, bell, diced
- 2 lbs. asparagus, trimmed & cut into 1" lengths
- 2 tsp lemon zest, freshly grated
- 1/2 tsp salt, divided
- 5 clove(s) garlic, minced
- 1 lbs. shrimp, raw, 26-30 per pound, peeled & deveined
- 1 cup(s) broth, chicken, reduced-sodium
- 1 tsp cornstarch
- 2 tbsp lemon juice
- 2 tablespoon parsley, chopped
Singapore Chicken Stew

- 1 pound boned, skinned chicken breasts
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon hot chili flakes
- 1/2 teaspoon Chinese five spice (see note above)
- 1 tablespoon vegetable oil
- 2 cloves garlic, peeled and minced
- 1 tablespoon grated fresh ginger
- 1 can (13.5 oz.) coconut milk
- 1 can (14.5 oz.) fat-skimmed chicken broth
- 2 cups lightly packed washed baby spinach leaves (about 4 oz.)
- 1 can (14 oz.) baby corn, drained
- 2 Roma tomatoes (about 8 oz. total), rinsed, cored, and chopped
- 1/4 cup sliced canned water chestnuts
- 1/4 cup thinly sliced green onions
- 1 tablespoon lime juice
- 3 tablespoons chopped fresh cilantro leaves
CHICKEN WITH LEMON CAPER SAUCE

Melt butter in skillet. Add chicken, saute 6-8 minutes until done, turn once
- 2 tbsp. butter
- 4 boneless skinless chicken breasts
- 3 tbsp. chopped parsley, fresh or dried
- 2 tbsp. lemon juice
- 2 tbsp. water
- 2 tbsp. drained capers (I only use 1 tbsp.)
- 1/2 tsp. pepper
- 1/2-1 c. sour cream
Turkey Bacon Scramble

- 2 slices turkey bacon, cooked to desired doneness
- 1 slice 2% milk fat Kraft Cheddar Slice
- 9 tbsp egg white beaters (equivalent to 3 eggs)
- 1 slice 45 cal. whole wheat bread
- 5 grape tomatoes cut in quarters
- salt & pepper to taste
Chicken Broccoli Rice Casserole

Cook minute rice as directed on box
- 1 Pkg. frozen chopped broccoli (thawed)
- Minute Rice (2 cups uncooked)
- 1 medium onion
- 1/2 cup chopped celery
- 1/2 cup milk
- 1 1/2 cans cream of chicken soup
- 1 small jar of cheese whiz (or you could sub 8 oz/ Velveeta)
- 4 Chicken breasts cooked in skillet - cubed
Baked Brie

- 1 Wedge of Brie

Cake Mix Cookies

Heat oven to 350 degrees. In a large bowl, combine all ingredients; mix well
- 1 Pkg. Pillsbury Plus German Chocolate Cake Mix
- 6 to 9 oz. Chocolate Chips
- 1/2 c. melted butter (or, Can't Believe It's Not Butter)
- 2 eggs, slightly beaten
Garlicky Green Beans

In a microwave safe bowl, add green beans and 1 tablespoon water
- 1 pound frozen green beans
- 1 tablespoon water
- 1 tablespoon butter
- 1 tablespoon extra-virgin olive oil
- 6 cloves peeled garlic, thinly sliced
- 4 strips pre-cooked bacon
- Salt and pepper

- 1 whole vanilla bean, split in half lengthwise, seeds scraped
