Fish Tacos

Cut halibut into 1" cubes
- Sauce:
- 1 lb Halibut (cut into 1" cubes)
- flour
- eggs
- Shake & Bake Italian Bread Crumbs
- Corn or Flour Tortillas
- cabbage - shredded
- lime wedges
- vegetable oil for pan frying
- 2 tbsp mayo
- 2 tbsp sour cream
- 1 1/2 tbsp salsa
- 4 shakes each: salt & pepper
- Red pepper to taste
- Chili powder to taste
FREEZER COFFEE CAKE

Pour batter into 9 x 13 ungreased pan
- Cream together:
- 1/2 cup shortening
- 1 cup sugar
- Add in:
- 2 eggs
- 1 tsp vanilla
- Combine dry ingredients and mix well with above ingredients:
- 2 cups flour
- 1 tsp baking powder
- 1 tsp soda
- 1/2 tsp salt
- Add:
- 1 cup sour cream
- Mix well and fold in:
- 2 cups peeled and chopped apples (I use Fuji) – about 2 apples
- Topping:
- 2 Tbs butter
- 1/2 cup chopped nuts (optional, walnuts or pecans)
- 3/4 cup brown sugar
- 1/2 tsp cinnamon
Hot Cider

Put liquid in 30 cup percolator (never use for coffee after cider has been brewed in it)
- 1/2 gal. cider
- 1 qt. cranapple or cranberry juice
- 2 c. orange juice
- 1 tsp whole cloves
- 1 tsp whole allspice
- 3 sticks cinnamon - broken
Chip Dip

Mix together. Serve with chips
- 1 - .7 oz Good Seasons Italian Salad Dressing Mix
- 1 - 8 oz. cream cheese
- 16 oz. sour cream
Festive Crostini

- 1/2 (3-ounce) package dried tomatoes
- 1 1/2 cups boiling water
- 1 (16-ounce) baguette, cut into1/2-inch-thick slices
- 2 garlic cloves, divided
- 1/2 (8-ounce) package fat-free cream cheese, softened
- 1 (4-ounce) package crumbled feta cheese
- 1 (2.5-ounce) can sliced ripe olives, drained
- 1/4 cup chopped fresh parsley
Pepperoni & Sausage Pizza Puffs

Got these from Plain Chicken Blog spot
- 3/4 cup flour
- 3/4 tsp baking powder
- 1/2 tsp garlic powder
- 3/4 cup whole milk (2% would be fine)
- 1 egg lightly beaten
- 4 oz mozzarella cheese, shredded (about 1 cup)
- 2 oz mini turkey pepperoni (about 1/2 cup)*
- 4 oz low-fat sausage, cooked and crumbled*
- Pizza sauce for dipping
- 2 The 2nd time I made these I put in a little more meat.
Jezebel

Mix together. Serve over cream cheese with crackers
- 18 oz. apple jelly
- 18 oz. pineapple preserves
- 5 oz. horseradish - drained
- 1 1/2 oz dry mustard
- 1 tbsp. coarsely cracked pepper
Catfish Batter

Mix ingredients. Coat fillets
- 1 cup corn meal
- 1/3 to 1/2 cup flour
- 1 tsp. onion powder (maybe less)
- little black pepper
- little sugar
Potato Salad

Boil eggs and potatoes. Mix sugar, mayo, yellow mustard well before adding to potatoes and eggs
- 1/2 potatoes
- 1/3 eggs
- onion (optional)
- sweet relish, drained well (to taste)
- sugar
- mayo
- yellow mustard
Vegetable Pizza

Put rolls on greased cookie sheet, flattening out like a pizza crust
- 2 - 8 oz. crescent rolls
- 8 oz. cream cheese
- 1 cup mayo
- 1 tsp. dill weed
- 1/2 tsp. garlic salt
- 1/2 cup chopped broccoli
- 1/2 cup chopped cauliflower
- 1/2 cup grated cheddar cheese
- 1/4 cup bacon bits
