Quick Meatball Lasagna

I found this recipe in the San Antonio Express News in response to a recipe search
- 2 (16 ounce) packages cooked italian-style meatballs, thawed (approximately 60 meatballs)
- 2 (26 ounce) jars smooth-style marinara sauce or 2 (26 ounce) jars your favorite pasta sauce
- 9 lasagna noodles, no cook (or traditional, cooked)
- 1 large egg
- 1 (15 ounce) container light ricotta cheese (fat free ok)
- 2 cups part-skim mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated or shredded
Lean Mean Cheeseburger

Place oats in foodsafe plastic bag
- 1 lb. beef, lean ground, (95% Lean)
- 2 tbsp oats, rolled, quick cooking
- 1/2 tsp steak seasoning blend
- 4 hamburger buns, whole-wheat, split
- 4 slice(s) cheese, American, low-fat (singles)
- lettuce leaves, optional
- slice(s) tomato(es), optional
Mushroom Turnovers

Cooking Light NOVEMBER 2002
- 2 cups all-purpose flour
- 3/4 cup (6 ounces) block-style fat-free cream cheese
- 6 tablespoons chilled butter, cut into small pieces
- 1 teaspoon salt
- 6 tablespoons ice water
- 1 pound mushrooms, coarsely chopped
- Cooking spray
- 1/4 cup minced shallots
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons chopped fresh basil
- 2 teaspoons water
- 1 large egg white, lightly beaten
Dill Dip

- tbsp each:
- 1 cup mayo
- 1 cup sour cream
- beau monde
- dill weed
- parsley
- minced onion
Twice Baked Potatoes

- 6 baked potatoes
- 1 stick butter
- 8 oz sour cream
- shredded cheddar (some mixed in, some on top) - to taste
- little milk
- little onion (optional)
- salt & pepper to taste
Broccoli Salad

- 1 head broccoli
- 6 to 8 slices cooked bacon, crumbled
- 1/2 cup chopped red onion
- 1/2 cup raisins, optional
- 8 ounces sharp Cheddar, cut into very small chunks
- 1 cup mayonnaise
- 2 tablespoons white vinegar
- 1/4 cup sugar
- 1/2 cup halved cherry tomatoes
- Salt and freshly ground black pepper
Hamburger Cheese Dip

- 1 lb. ground beef
- 1 lb. sausage
- 2 lbs. Velveeta Cheese
- Onion
- Jalapeno peppers (to taste, be careful)
- 1 reg. size can peeled tomatoes (drained & cut)
Cinnamon Monkey Bread

Shake biscuit pieces in sugar/cinnamon mixture
- Sauce:
- 3 cans biscuits (buttermilk) cut in quarters
- 2/3 cup sugar
- 1 tbsp. cinnamon
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 tsp. cinnamon
Roasted Vegetable Cornucopias

1. Preheat oven to 425F. Coat 2 baking sheets with cooking spray
- Cornucopias:
- 1 large egg
- 1 - 17.3-oz. pkg. prepared puff pastry (2 sheets), thawed
- Roasted Vegetables:
- 2 cups cauliflower florets
- 2 cups baby zucchini, or 1/2 lb. regular zucchini, halved and cut into 1 1/2-inch chunks
- 2 cups baby pattypan squash, or 1/2 lb. regular pattypan squash, cut into 1 1/2-inch chunks
- 1 cup baby carrots
- 12 purple pearl onions, peeled and halved
- 6 oz. cremini mushrooms, trimmed
- 1/4 cup olive oil
- 2 tbsp chopped fresh sage
- 2 tbsp chopped fresh marjoram
- 1 tbsp chopped fresh thyme
- 1 tsp salt
- 1/4 tsp ground black pepper
