Hummus-Crusted Chicken

- 4 boneless, skinless chicken breasts
- salt and pepper
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 medium onion, chopped
- 1 cup hummus, homemade or storebought
- 1 Tbsp. olive oil
- 1 lemons
- 1 tsp. smoked paprika or sumac

- 1 can Pillsbury™ refrigerated Classic Pizza Crust
- 3/4 lb deli ham (thinly sliced, but not shaved)
- 12 slices Swiss cheese (thinly sliced)
- Glaze
- 1/2 cup (8 tablespoons) butter
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon poppy seeds
Rhubarb-Ginger Crisp

- 3/4 c. plus 2 T. flour, divided
- 3/4 c. sugar
- 4 c. chopped rhubarb
- 3/4 c. firmly packed light brown sugar (5.2)
- 3/4 c. old fashioned oats (2.6)
- 1/2 tsp. grated fresh or 1/4 tsp ground ginger
- 6 T cold butter, cut into pieces
- Vanilla ice cream (optional)
Low Sugar Strawberry Rhubarb Crunch

A lot of rhubarb recipes add a large amount of sugar
- Fruit Filling:
- 4 cups chopped fresh rhubarb (1lb.)
- 1 pint (or less) strawberries, hulled and sliced (10 oz.
- 2 tablespoon honey (1.8 oz)
- 2 T. corn starch
- Crunch:
- 1 1/2 cup rolled oats - blend half in magic bullet (5 oz)
- 2/3 cup packed brown sugar (4.3 oz)
- 3 T butter
- 2 T olive oil (8 oz)
- 1 1/2 teaspoon ground cinnamon
Crispy Skillet Lasagna

First time I made this I followed exactly, except used tomatoes with salt, dried parsley
- 1 Tbsp olive oil
- 1 medium onion, finely chopped
- 1 tsp dried oregano
- 1/4 tsp crushed red pepper flakes
- black pepper
- 1 lb. extra-lean ground turkey
- 1 14.5 oz. can no-salt-added diced tomatoes
- 1 10.75 oz. can Campbell's Healthy Request Tomato Soup
- 1/2 c. lowfat, small-curd cottage cheese
- 1/2 c. fresh flat-leaf parsley, chopped
- 4 oz part-skim mozzarella, coarsely grated (1 cup)
- 6 no-boil lasagna noodles, each broken into 4 or 5 pieces
Crock-Pot Cilantro Lime Chicken

This quick and easy crock-pot recipe is a winner for dinner in our house
- 1 1/2 lbs. boneless skinless chicken breasts
- 2 limes, zested and juiced
- 1 cup chopped fresh cilantro, plus extra for garnish/serving
- 1 (1 lb.) bag frozen corn
- 1 small onion, diced
- 1 cup salsa
- 2 cloves garlic, minced
- 1 teaspoon cumin
- salt & pepper to taste
Ramen Salad

- Dressing:
- 1 pkg. chicken or beef flavored Ramen noodles
- 1 pkg. pre-packaged coleslaw
- Slivered almonds, toasted
- 1 sm. pkg (aprox. 1/4 c) sunflower seeds
- 1/4 c. chopped onions (green or regular)
- 1/3 c. apple cider vinegar,
- 1/3 c. oil
- 1/3 c. sugar
- ramen flavoring packet.
Egg Bake

Mix up the night before to bake in the morning
- 1 lb. Meat (ham or sausage)
- 8 eggs
- 6 bread slices - cubed (remove crust)
- 2 c. milk
- 1 c. shre4dded cheddar cheese
- 1 tsp. dry mustard (can sub. prepared mustard)
- 1 tsp salt (optional)
Lasagna Rollups

- 8 ounces lasagna noodles (12 noodles)
- 1 Tablespoon salad oil
- 10 ounces frozen chopped broccoli, thawed and squeezed dry
- 2 Tablespoons chopped onion
- 15 ounces ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1 egg
- 30 ounces spaghetti sauce
- 1/2 cup water
- 8 ounces mozzarella cheese shredded
Glaze

In a small bowl, mix glaze ingredients with wire whisk until smooth and thin enough to drizzle
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 1 to 3 tablespoons milk
