- 2 cups graham cracker crumbs
- 1/4 cup white sugar
- 1/2 cup melted butter
- 1 (14 ounce) can sweetened condensed milk
- 2 cups flaked coconut (7oz bag)
- 1 (12 ounce) package semisweet chocolate chips, melted
The Perfect Chocolate Chip Cookie

browning the butter gives the cookie an almost caramel like quality
- 1 3/4 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 14 tablespoons butter
- 1/2 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 tablespoon vanilla extract
- 1 large egg
- 1 large egg yolk
- 1 cup chocolate chips
Apple Cinnamon Butternut Squash Soup

You will really enjoy sipping on this squash soup sweetened with apple and a hint of cinnamon
- 8 cups cubed seeded peeled butternut squash (2 medium)
- 1 large apple, peeled, chopped
- 1 large onion, cut into 1-inch pieces
- 2 tablespoons packed brown sugar
- 3/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon pepper
- 3 cups Progresso® chicken broth (from 32-oz carton)
- 3/4 cup milk
- 1 container (6 oz) Greek Fat Free plain yogurt
- 2 tablespoons chopped fresh chives
Smoky Black Bean and Butternut Squash Chili

The savory combination of earthy black beans, smoky chipotle chile and sweet butternut squash is absolutely irresis...
- 1 Tbsp olive oil
- 1 1/2 onion, chopped
- 2 garlic cloves, minced
- 1 Tbsp cumin seeds (dried is fine)
- 1 1/2 Tbsp. minced canned chipotle chiles in adobo sauce (found in Latin aisle. (don't use too much, freeze leftovers in portions)
- 3 (15oz) cans black beans, rinsed and well drained
- 1 1/2 lb. butternut squash, peeled and cut into 1/2 in. cubes (about 4 c.)
- 1 (14.5 oz.) can diced tomatoes
- 3 c. low-sodium chicken or vegetable broth
- 1/2 c. low-fat sour cream, optional
- Cilantro for garnish, optional
Black Bean Quesadillas

A quick, no fuss meal. Note: for a take on the sweet and savory theme, try adding diced mango to the bean filling
- 1/2 c. low-fat sour cream (or hummus)
- 1/2 c. store-bought salsa
- 1 (19-oz.) can black beans, rinsed and drained
- 1 c. grated Monterey Jack cheese
- 1/2 c. chopped cilantro
- 1/4 c. chopped white onion
- 1 c. corn (approx)
- 2 Tbsp lime juice
- 1/2 tsp salt
- 4 (10-in.) whole-grain flour tortillas
- 1 Tbsp. vegetable oil, divided
- optional: can ro-tel original, peppers

- Crust:
- 1 quart ripe strawberries, hulled and sliced
- unbaked pie crust (see recipe below)
- 1 cup sugar
- 1/2 cup sifted flour
- 1 cup half and half
- 1/4 teaspoon vanilla
- 1 1/2 cup flour
- 1 1/2 teaspoon sugar
- 1 teaspoon salt
- 1/2 cup oil
- 2 tablespoons cold milk

- 1 can (8.5 oz) crushed pineapple, well drained
- 1 Tbsp Lawry's seasoning salt

Pizza Sauce

- 1 small onion, chopped
- 1 small red bell pepper, seeded and chopped
- 1 garlic clove, crushed
- 2 tbsp olive oil
- 8 oz. tomatoes (canned or fresh)
- 1 tbsp tomato paste
- 1 tsp light brown sugar
- 2 tsp chopped basil (fresh or dried)
- 1/2 tsp dried oregano
- 1 bay leaf
- salt and pepper

- 4 tablespoons unsalted butter
- 2 medium onions diced
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1/4 teaspoon crushed red pepper
- 2 teaspoons curry powder
- 1/2 teaspoon of coriander
- 3 15 oz can pumpkin
- 1 15 oz can whole kernel corn - drained
- 5 cup chicken broth
- 2 cups milk
- 1/2 cup brown sugar
- 1/2 cup half and half

- 1 1/4 cups margarine or butter, softened
- Filling:
- 1 (12.5-oz.) jar (1 cup) caramel ice cream topping
- 3 tablespoons Pillsbury BEST® All Purpose or Unbleached Flour
- 1 (6-oz.) pkg. (1 cup) semisweet chocolate chips
