- 1 lbs extra-lean ground turkey
- 1 tsp garlic clove, minced

- 1 can (10 3/4) Campbell's Condensed Cream of Chicken Soup
- 1/2 cup Sour cream
- 1 cup Pace Picante Sauce
- 2 tsp. chili powder
- 2 cups chopped cooked chicken
- 1/2 cup shredded Monterey Jack (or Mozzarella) cheese
- 9-10 flour tortilla
- 1 small tomato, chopped
- 1/2 small onion, chopped
- 1 can black beans
- 1 cup corn

- 1/2 cup semisweet chocolate chips
- 1/3 cup fat-free sweetened condensed milk (from 14-ounce can)
- 1 cup Gold Medal™ whole wheat flour
- 1/2 cup old-fashioned or quick-cooking oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup packed brown sugar
- 1/4 cup canola or soybean oil
- 1 teaspoon vanilla

Pumpkin Chocolate chip Muffins

Muffins dough can be kept in refrigerator for a couple of days and bake as needed
- 3 1/3 all purpose flour (17.1)
- 1 3/4 - 2 cup sugar (15.2)
- 2 T. Pumpkin Pie spice (Cinnamon, Ginger, Nutmeg, Allspice)
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 eggs
- 1 can pumpkin solid pack (16oz)
- 1/2 c. (1 stick) melted butter
- 1/2 c. oil (3.8)
- 1 c. chocolate chips (6.8) more is better

Beef and Butternut Chili

- 1 tablespoon canola oil, divided
- 1 1/2 pounds boneless chuck roast, trimmed and cut into 1/2 inch cubes
- 3/4 teaspoon salt
- 1 1/2 cups chopped onion
- 1/2 cup chopped green bell pepper
- 2 tablespoons tomato paste
- 1 tablespoon minced fresh garlic
- 2 teaspoons diced jalapeno peper
- 2/3 cup dry red wine
- 1 1/2 teaspoons ground ancho chile pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon ground red pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/8 teaspoon ground cinnamon
- 1 (28-oz) can whole tomatoes, undrained and chopped
- 1 (15-oz) can no-salt-added kidney beans, rinsed and drained
- 1 cup coarsely chopped carrot
- 6 tablespoons reduced-fat sour cream
- 2 tablespoons fresh cilantro leaves
Strawberry-Rhubarb Dump Cake

Serve this cake in dessert bowls like a cobbler
- 4 c. fresh strawberries, sliced
- 4 c. fresh rhubarb, coarsely chopped
- 1 c. sugar
- 1 6-oz package strawberry-flavored Jello
- 1 pkg. (18.25-oz) white cake mix
- 1/2 c. butter, melted
- 1/2 c. water mixed with 1 tsp vanilla

- 1 stick butter or margarine - room temp.
- 4 c. powdered sugar
Jim Vlasic's Marinated Bean Salsa

At Emu dinner's at the Vlasic's we've had this dip a few times
- 1 Can (15oz) black eyed peas, rinsed and drained
- 1 can (15 oz) black beans
- 1 can golden white whole kernel corn drained = 3 ears fresh corn
- 1 med. red onion, diced - or white onion
- 1 small red (or green) sweet pepper, diced
- 1 jalapeno pepper, finely chopped (or Jim used a can of chopped green chilis)
- 1/3 fresh cilantro or parsley, chopped and/or fresh or dried basil chopped 1/8 cup
- 3 tomatoes finely chopped, or 1 can chopped tomato
- Marinade
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup olive oil
- 1/2 cup vinegar
- 2/3 cup sugar (a little sweet for me, maybe use less)
