- Ingredients1 cup rice vinegar
- 1 cup sugar
- 3/4 cup soy sauce
- 2 tablespoons vegetable oil
- 6 garlic cloves, minced
- 2 tablespoons grated fresh ginger
- 4 (6- to 8-ounce) boneless beef short ribs, trimmed and butterflied
- Salt and pepper
- 2 seedless English cucumbers, peeled, halved lengthwise, and sliced thin
- 1/2 onion, sliced thin

- Makes 1/2 gallon of brine (enough for 3 quarts)
- 6 Cups Cold Water
- 1 1/8 Cups white vinegar (1/8 cup= 2 TBSP)
- 3/8 Cup salt (1/4 Cup plus 2 TBSP) (pickling salt, non iodized)
- 3 tsp sugar
- WHOLE OR SLICES PICKLES
- Per quart of pickles
- 1 tsp to 1-1/2 tsp of dried garlic flakes
- 1 whole Allspice
- 1/4 to 1/2 tsp. Pickling Spices (remove any allspice from the pickling spices)
- 1/2 tsp. Mustard Seeds
- 1/4 tsp. Dried Red Bell Pepper
- 1 Whole Fresh Dill Head (you can substitute Dill Seeds but you would have to experiment with the amount)
