1 Bushel of cucumbers makes 7 gallons of pickles ***Mix up the brine 2 to 3 days in advance of making the pickle...

  • Makes 1/2 gallon of brine (enough for 3 quarts)
  • 6 Cups Cold Water
  • 1 1/8 Cups white vinegar (1/8 cup= 2 TBSP)
  • 3/8 Cup salt (1/4 Cup plus 2 TBSP) (pickling salt, non iodized)
  • 3 tsp sugar
  • WHOLE OR SLICES PICKLES
  • Per quart of pickles
  • 1 tsp to 1-1/2 tsp of dried garlic flakes
  • 1 whole Allspice
  • 1/4 to 1/2 tsp. Pickling Spices (remove any allspice from the pickling spices)
  • 1/2 tsp. Mustard Seeds
  • 1/4 tsp. Dried Red Bell Pepper
  • 1 Whole Fresh Dill Head (you can substitute Dill Seeds but you would have to experiment with the amount)
