Stuffed Cheeseburgers

In a large bowl, combine the first eight ingredients
- 1 cup chopped sweet onion
- 1/2 cup crushed saltines (about 15 crackers)
- 1 egg
- 1 jalapeno pepper, seeded and minced
- 1 envelope ranch salad dressing mix
- 1 tablespoon Worcestershire sauce
- 1 garlic clove, minced
- 1 teaspoon pepper
- 2 pounds ground beef
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- 1 jar (4-1/2 ounces) sliced mushrooms, drained
- 3 tablespoons cream cheese, softened
- 6 kaiser rolls, split
Herbed Chicken Fricassee

On waxed paper, combine flour, Italian seasoning and peper
- 2 T all purpose flour
- 1/2 t Italian seasoning, crushed
- 1/8 t pepper
- 4 skinless, bonelss chicken breat halves or 8 skinless, boneless chicken thighs (1 lb)
- 2 T margarine/butter
- 1 - 10 3/4 oz cond cream broccoli soup
- 1 - 16 oz stewed tomatoes, undrained
- hot booked noodles or rice
Thin Mint Cupcakes

For the Cupcakes Preheat oven to 350°F and line pans with cupcake liners
- For the Chocolate Cupcakes
- 2 eggs
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 teaspoons vanilla extract
- 3/4 cup flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup buttermilk or milk
- For the Chocolate Ganache
- 2/3 cup chocolate chips
- 3 tablespoons heavy whipping cream
- For the Mint Frosting
- 3/4 cup butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons mint or peppermint extract
- 2-3 cups powdered sugar
