Grilled Caribbean Chicken Sandwich Recipe

- 4 chicken breast, boneless, skinless
- 2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons hot pepper sauce
- 1 1/2 tablespoons ginger, finely chopped
- 1 1/2 tablespoons soy sauce
- 1 1/2 tablespoons peanut oil
- 2 cloves galic, coarsley chopped
- 1 teaspoon thyme, dried
- 3/4 teaspoon black pepper
- 3/4 teaspoon allspice, ground
- 1/2 teaspoon salt
- 4 hamburger buns

- 1 can sweetened condensed milk (14oz.)
- Red paste, powder, or gel food color
- Blue paste, powder, or gel food color
- 1 teas cinnamon
- cayenne pepper--amount varies; 1/2 teas for low-grade fever, 1 teaspoon + for hospital wing
- 1/2 teas vanilla extract (mint extract can be substituted if you'd prefer a frostier cool side)

- 1 cup butter, room temperature, cubed (2 sticks)
- 1 cup light brown sugar, packed
- 1 egg
- 1 tsp. vanilla extract

- 1 cup milk
- 1 package (10 oz.) refrigerated flaky buttermilk biscuits

In bowl, cream together butter and sugar
- CHOCOLATE COATING:
- 1/2 pound unsalted butter
- 3-3/4 cups confectioners' sugar
- 1 pound flaked coconut
- 1/2 cup sweetened condensed milk
- 1 cup chopped walnuts
- 1 teaspoon vanilla extract
- 2 cups (12 ounces) semisweet chocolate chips
- 4 ounces unsweetened chocolate
- 2 -inch x 1-inch x 1/2-inch piece paraffin wax or 2 T butter crisco
- Round wooden toothpicks

Crockpot Peanut Clusters

Use a large crockpot. This makes about 150 peanut clusters
- 3 (16-ounce) jars lightly salted roasted peanuts (lightly salted is important!)
- 2 (4-ounce) boxes German Baker's Chocolate
- 1 (8-ounce) box Unsweetened Baker's Chocolate (there are 2 in the picture. that was wrong.)
- 1 (24-ounce) bag semi-sweet chocolate chips
- 1 tsp vanilla (not pictured because I didn't know I wanted/needed it until after the photo)

- 14 oz sweet cond milk
- 2 c mini choc chips
- Peanut Butter Layer:
- 1 c smooth peanut butter
- 1/2 c powdered sugar
- Chocolate Layer:
- 12 oz milk choc chips
- 1/2 c heavy cream (opt)
