Muffins Cheese, Red Onion and Rosemary

- 1 tablespoon butter
- 1/3 cup finely chopped red onion
- 3/4 cup whole wheat pastry flour or white whole wheat flour
- 1/2 tablespoon baking powder
- 1 small pinch coarse salt
- 1/2 cup milk
- 1 large egg
- 1 tablespoon plain greek yogurt
- 1 tablespoon freshly chopped rosemary, plus more for garnish
- 2 ounces softened goat cheese
Sunday Gravy, Italian Ragu Sauce over Pasta, Pressure Cooker

Notes: I made the meatball mixture, first, since my pressure cooker time was 45 minutes
- SAUCE:
- 2 tablespoons olive oil
- 1 rack baby back ribs (about 2 1/4 pounds), cut into 2-rib sections
- Table salt and ground black pepper
- 1 pound hot Italian sausage links
- 2 medium onions, chopped fine (about 2-cups)
- 1 1/4 teaspoons dried oregano
- 3 tablespoons tomato paste
- 4 medium garlic cloves, minced or pressed through garlic press (about 4-teaspoons)
- 2 (28-ounce) cans crushed tomatoes
- 2/3 cup beef broth
- 1/4 cup fresh basil leaves, chopped
- MEATBALLS:
- 2 slices hearty white sandwich bread, crusts removed and bread cut into 1/2-inch cubes
- 1/2 cup buttermilk (Six tablespoons of plain yogurt thinned with 2 tablespoons of milk can be substituted for the buttermilk.)
- 1/4 cup fresh parsley leaves, chopped
- 2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
- 1 large egg yolk
- 1/2 teaspoon table salt
- 1/4 teaspoon crushed red pepper flakes
- 1 pound meatloaf mix* (I used a combo of ground beef and pork)
- 2 ounces thinly sliced prosciutto, chopped fine
- 1 ounce Pecorino Romano, grated (about 1/2 cup)
- 1/2 cup olive oil
- PASTA:
- 1 1/2 pounds spaghetti or linguine
- 2 tablespoons table salt
- Grated parmesan cheese for serving

In a medium bowl whisk together egg and cornstarch until smooth
- 2 boneless skinless chicken breasts (cut into 1” chunks)
- 1 egg
- 1/4 cup cornstarch
- Sauce-
- 1/4 cup chicken broth
- 1 tablespoon chili garlic sauce (more or less to taste)
- 1 tablespoon tomato paste
- 2 teaspoons soy sauce
- 1 teaspoon sugar
- 2 garlic cloves (minced)
- 1/2 cup green onions (sliced)
- 1/2 cup roasted peanuts
- Oil (for frying)
Shaved Brussels Sprouts Salad with Warm Maple-Bacon Vinaigrette

• Cook the bacon in a large skillet
- 4-6 strips bacon (depending on how much you love bacon)
- 1/4 cup apple cider vinegar
- 2 tablespoons pure maple syrup
- Pinch of salt & plenty of freshly ground pepper
- 1 pound Brussels sprouts, outer leaves removed, thinly shredded (I used a mandoline)
White Castle-Style Sliders

Put the onion in a medium bowl and cover with 1/2 cup water
- 1 onion, finely chopped
- 10 ounces ground beef chuck (80% lean)
- 1 teaspoon onion powder
- Kosher salt and freshly ground pepper
- 1 tablespoon unsalted butter, cut into pieces
- 8 slider buns, split
- 8 thin dill pickle chips

- 1 pound ground beef
- 1/4 cup panko bread crumbs
- 1 tablespoon parsley, chopped
- 1 teaspoon dried oregano
- 1/4 cup onion, finely chopped
- 1/2 teaspoon Garlic Powder
- 1/8 teaspoon Pepper
- 1/2 teaspoon salt
- 1 egg
- 1 tbsp. olive oil
- 5 tbsp. butter
- 3 tbsp. flour
- 2 cups beef broth
- 1 cup heavy cream
- 1 Tablespoon Worcestershire sauce
- 1 tsp. Dijon mustard
- salt and pepper to taste

Position rack in center of oven and preheat to 450°F
- 1 9- to 9 1/2-pound prime rib beef roast, excess fat trimmed
- 1 tablespoon olive oil
- 6 medium onions, peeled, quartered
- 2 1/2 cups canned beef broth
- 1 3/4 cups Madeira
- 1 1/4 cups dry red wine
- 4 large fresh thyme sprigs
- 4 large fresh parsley sprigs
- 3 large fresh rosemary sprigs
- 1 bay leaf
- 2 tablespoons (1/4 stick) butter, room temperature
- 2 tablespoons all purpose flour
