Chicken: Nonna’s Chicken Cutlets

1. Brine chicken cutlets in salt water for one hour
- for the cutlets:
- .
- 4-8 chicken cutlets, breast butterflied and pounded out
- 1 quart salt water brine (a basic brine is 4 cups salt for 1 quart of water)
- 3 eggs
- 2 tablespoons freshly grated Parmesan cheese, divided
- 1 teaspoon roughly chopped parsley
- salt, to taste
- freshly ground black pepper, to taste
- 1 tablespoon all-purpose flour
- 6 cups breadcrumbs
- 2 tablespoons extra-virgin olive oil
- for the lemon-parsley dressing:
- 3 lemons
- 4 ounces extra virgin olive oil
- 1 tablespoon roughly chopped parsley
- 3 cloves garlic, minced
- salt, to taste
- freshly ground black pepper, to taste
- 1 tablespoon Sicilian oregano
Beef: Braised Beef Brisket with Onions, Mushrooms, and Balsamic

Serve with potato pancakes
- Extra-virgin olive oil
- 1 (5-pound) beef brisket
- Kosher salt
- 1/4 pound slab bacon, skin removed and reserved, bacon cut into lardons
- 3 large onions, thinly sliced
- 3 celery ribs, thinly sliced on the bias
- 4 cloves garlic, smashed and finely chopped
- 1 pound cremini mushrooms, stemmed and finely sliced
- 2 cups balsamic vinegar
- 3 to 4 cups chicken stock
- 4 bay leaves
- 1 fresh thyme bundle
- 1 bunch finely chopped fresh chives, for garnish
Better Than Takeout Baked Honey Sesame Chinese Chicken

In a bowl, mix cubed chicken with the 1 cup of corn starch; coat thoroughly
- 4 chicken breasts (cubed)
- corn starch
- coconut oil (I used refined so there was no coconut taste)
- 8 tablespoons honey
- 5 tablespoons ketchup
- 4 tablespoons sugar
- 2 tablespoons brown sugar
- 3 tablespoons white vinegar
- 4 tablespoons soy sauce
- 1 pinch salt
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoons onion powder
- 3 tablespoons corn starch (mixed with 2 tablespoons water)
- scallions (/green onion)
- sesame seeds (I used toasted)
- 1 cup corn starch (for dipping)
- 2 tablespoons coconut oil (melted, refined)
- Scallion/green onion
- Sesame seeds (I used toasted which I purchased)
Potato Soup, Loaded (Slow Cooker)

Directions: Add the potatoes, onions, chicken broth, salt and pepper to the slow cooker
- 4 cups of potatoes, peeled and chopped
- 3/4 cup of onions
- 4 cups of chicken broth
- 1/2 Tbsp. of salt

Every time I make this I change something
- 2 Tbsp. Vegetable Oil
- 1 Medium Onion diced
- 2 cloves of garlic minced
- 1 medium green pepper, chopped

- 1 pound chop meat (80/20)
- 1 can diced tomatoes (28 ozs)
- 1 small can tomato sauce (8 ozs) Hunt's made for chili sauce is the best
