- 2 teaspoons dried thyme
- 1/2 teaspoon sugar
- Kosher salt and freshly ground pepper
- 8 skin-on, bone-in chicken thighs, trimmed (2 to 2 1/2 pounds)
- 1 tablespoon fresh lemon juice
- 2 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
- 2 romaine lettuce hearts, chopped (about 8 cups)
- 1 cucumber, chopped
- 1 tomato, chopped
- 2 cups lightly salted pita chips, crushed
EGGPLANT ‘MEATBALLS’ OVER ZUCCHINI PASTA

Preheat the oven to 350 degrees F
- 1 medium eggplant
- 4 cloves of garlic, minced
- 2 tablespoons of water
- 1 3/4 cups of gluten free or old fashioned oats
- 1 organic egg
- 1 cup of loosely packed basil
- 1 tablespoon of parmesan cheese (*optional)
- 1/2 teaspoon of red pepper flakes
- 1/2 teaspoon of dried parsley
- Sea salt and pepper
- Extra virgin olive oil
- 4 zucchinis/yellow squash
- Marinara sauce (we used Rao's Roasted Eggplant Sauce)

- 1 tablespoon olive or vegetable oil
- 2 cloves garlic, finely chopped
- 8 medium green onions, sliced (1/2 cup)o
- 2 medium carrots, chopped (1 cup)
- 2 cups cubed cooked chicken
- 2 cups uncooked egg noodles (4 oz)
- 1 tablespoon chopped fresh parsley or 1 teaspoon parsley flakes
- 1/4 teaspoon pepper
- 1 dried bay leaf
- 5 1/4 cups Progresso® chicken broth (from two 32-oz cartons)
Chicken Pad Thai, PF Chang's

Combine all sauce ingredients in a bowl; set aside
- Sauce:
- 1/2 cup low-fat coconut milk
- 6 tablespoons creamy peanut butter
- 4 tablespoons light soy sauce
- 4 tablespoons fresh squeezed lime juice
- 1/2 tablespoon rice wine vinegar
- 2 tablespoons brown sugar
- 2 teaspoons grated gingerroot
- 1/2 teaspoon red pepper flakes
- Chicken Stir Fry:
- 1/2 tablespoon canola oil
- 1/2 tablespoon dark sesame oil
- 1 -2 teaspoon curry powder (optional)
- 1 lb chicken breast , cut up into bite size pieces
- 6 -8 ounces frozen sugar snap peas
- 1 medium onion , chopped
- 2 garlic cloves , minced
- 1/4 cup dry roasted peanuts , chopped (lightly salted)

- 1/2 cup extra-virgin olive oil
- 1/4 cup rice-wine vinegar
- 1/4 cup honey
- 2 tablespoons Sriracha, or more to taste

Boneless Fried Chicken with 12 Herbs and Spices

Heat oil in Dutch oven or tabletop fryer to 350°F
- Herbs and Spices:
- 12 pieces skin-on, boneless cut chicken breasts and thighs (ask your butcher to do this or use a sharp boning or paring knife to cut bones from breasts and thighs—do not use drummers)
- 2 cups all-purpose flour
- 3 tablespoons light brown sugar
- 2 tablespoons Kosher salt
- 1 tablespoon paprika
- 1 teaspoon oregano
- 1 teaspoon granulated onion
- 1 teaspoon chili powder (I use Gebhardt’s)
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon dry mustard
- 1 teaspoon dry thyme leaves
- 1/2 teaspoon celery salt
- 1/2 teaspoon sage
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- 6 egg whites
- Honey and hot sauce, to serve
- Frying oil, 2 quarts minimum
