Banana Coconut Bread

Preheat the oven to 350° F
- 2 med over-ripe bananas, mashed
- 1/2 cup mayo / dressing (I used olive oil mayo)
- 1 egg
- 1 1/2 cups AP flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup sugar
- 1/3 cup flaked coconut
- 1/3 cup chopped pecans
Whipped Cream Angel Food Cake

- 1 1/4 cups Cake flour
- 2 tsp. Baking Powder
- 1 cup Whipping cream
- 4 large Egg whites
- 1 cup Granulated sugar
- 1 tsp. Pure vanilla extract
- 1 pkg. Frosting and filling of your choice

Zucchini & Tomato Casserole

- 1 1/2 cups grated Cheddar cheese
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 2 cloves garlic, minced
- salt and pepper to taste
- 2 medium zucchinis, thinly sliced
- 5 plum tomatoes, thinly sliced
- 1/4 cup butter
- 2 tablespoons finely chopped onion
- 3/4 cup fine bread crumbs

- 1 lb. jumbo shrimp - peeled & deveined, tails removed

Zesty Spaghetti with Seafood

Combine first 10 ingredients in a large bowl
- 1 cup Diced plum tomatoes (4 medium)
- 1/3 cup Clam juice
- 1/4 cup Chopped fresh flat-leaf parsley
- 1/4 cup Extra virgin olive oil
- 1 tsp. grated lemon rind
- 3 Tbsp. lemon juice
- 2 tsp. Fresh dill or 1/2 teas. dried dill
- 1 tsp. Thyme
- 1/2 tsp. Salt
- 2 quarts Water
- 3/4 lb Medium shrimp, peeled & deveined
- 3/4 lb Sea scallops - quartered
- 5 cups Spaghetti or linguine - cooked measurement

- 8 oz. chopped ham
- 1 qt. water
- 1 medium onion - chopped
- 1/4 tsp. coarse salt
- 1/2 tsp. pepper

- (I like sliced onions cooked with the peas but recipe did not call for them)
- 2 cups hot cooked rice
