Sweet Potato Rounds

Peel sweet potatoes and slice into 1/2 inch slices
- 3 cloves Garlic
- 1/4 cup Olive Oil
- 2 1/2 lb sweet potatoes, peeled & sliced into 1/2 inch rounds
- Sage (if fresh, fry in olive oil) 24 fresh otherwise just sprinkle into garlic & oil (about 1 teaspoon)

Prepare rice according to the package directions
- 1 cup dry rice
- 6 tbsp butter
- 3-4 garlic gloves, minced
- 1 bag extra large, cooked, peeled, deveined shrimp
- 1/4 cup Parmesan cheese, shredded
- 3 tbsp skim milk
- 2 tbsp fresh parsley, chopped
- Salt and pepper, to taste
- Shredded Parmesan cheese for garnish, optional
Tuna Casserole - One Pan

Add pasta to large skillet or sauce pan
- 8 ounces dry spirali pasta
- 1 (16 oz) package frozen peas and carrots
- 1 cup yellow corn
- 1/4 cup white onion, chopped
- 1 cup sour cream
- 1 (12 oz) can tuna, drained
- 1/2 cup vegetable broth
- 2 teaspoons mustard (Dijon preferred, or yellow mustard)
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1/2 cup Parmesan Cheese

Cook noodles and drain. Add butter and toss until butter is melted
- 1 pound Regular noodles
- 1 tsp. Salt
- 3 Tbsp. Butter
- 2 cups Shredded Cheddar Cheese

White Bread

In a large mixing bowl, dissolve yeast in warm water and sugar
- 3 cups luke-warm water
- 1/4 cup sugar
- 1 1/2 Tbsp. yeast
- 1/3 cup oil
- 1 Tbsp. salt
- 6 - 7 cups unbleached ground white wheat flour (You can use regular all-purpose flour with success as well. You will need more flour... closer to 8 cups, and it will make a softer, less-coarse bread.)
- opt. 1 Tbsp. vital wheat gluten (if using whole white wheat flour)
