Preheat oven to 400º F. Trim ends off eggplants
- 4 eggplants
- 1/4 cup olive oil
- 1 package frozen spinach, thawed
- 3 cups ricotta cheese
- 1 egg
- 1 1/2 cups prepared marinara sauce
- 2 cups Parmesan cheese, grated, divided
- 3/4 cups fresh basil leaves, finely chopped
- 1 cup mozzarella cheese, grated
- Kosher salt and freshly ground pepper, to taste

- 1 9 inch baked pastry shell
- 3 eggs
- 3 cups milk
- 1 cup granulated sugar
- 1/3 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon kosher salt

Apple Pie Bites

- 1/4 cup packed light brown sugar
- 1 tsp apple pie spice, and additional apple pie spice for sprinkling on top of crescent rolls
- 3 Tbsp butter, melted
- 1/3 cup chopped pecans
- 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices
