Shrimp & Grist - Ultimate Charleston

Preparation 1. Peel and devein the shrimp, reserving the shrimp in a bowl and the shells in a small saucepan
- SHRIMP:
- Shrimp and Grits
- Serves: 4
- Time: 1 hour
- 1 1/4 pounds headless large (21 to 25 count) shell-on shrimp
- 1 bay leaf
- Kosher salt
- 3/4 tsp. sugar
- 1 pinch of cayenne
- 1 lb. vine-ripened tomatoes, cored and quartered
- 1 tsp. red wine vinegar, plus more to taste
- 4 oz. slab bacon, cut into large dice
- 1 lemon, halved
- 1 tbsp. all-purpose flour
- 2 garlic cloves, minced
- Freshly ground black pepper
- Charleston Hominy (recipe follows)
- CHARLESTON HOMINY (GRITS)
- Makes: 3 cups
- Time: 45 minutes
- 2 cups whole milk
- 1 cup stone-ground coarse grits
- 2 tbsp. unsalted butter
- Kosher salt and freshly ground black pepper
Birds Eye Cornbread Bake

Stir cornbread mixes, sour cream and eggs in a large bowl until smooth
- 2 pouches cornbread mix 6.5 oz ea
- 1 16 oz Sour Cream
- 2 Eggs
- 1 2 oz jar Chopped pimento - drained
- 1 cup Shredded Cheddar Cheese
- 1/2 bag Birds Eye Sweet Kernel Corn - thawed & drained
- 1/4 cup sliced green onions
Chicken Bacon Nuggets

Cut chicken breasts into 24 (1 inch) cubes
- 2 lge skinned and boned chicken breasts
- 8 slices bacon cut into thirds
- 1/2 cup orange marmalade
- 1/4 cup soy sauce
- 2 tb sesame oil
- 1 teaspoon ground ginger
- 1 clove garlic - minced
Cajun Pork Loin Roast

Heat oven to 350. Combine all seasonings and rub all over surfaces of roast
- 3 tbsp Paprika
- 1/2 tsp Cayenne Pepper
- 1 tbsp Garlic powder
- 2 tsp Dried Oregano
- 2 tsp Dried Thyme
- 1/2 tsp salt
- 1/2 tsp white pepper
- 1/2 tsp Cumin
- 1/4 tsp nutmeg
- 1 2 lb Boneless pork loin roast, well trimmed
Beef with Mushrooms & Red Wine Gravy

- 1 1/2 lbs beef stew meat - well trimmed & cut into 1 inch cubes
- 2 medium onions - cut into small wedges
- 1 8z pkg fresh sliced mushrooms
- 1 1.2 oz envelope beefy onion soup mix
- 3 Tbsp. cornstarch
- Coarse salt & pepper to taste
- 1 cup dry red wine
- 1/2 cup beef broth

- 2 - 14oz cans Italian diced tomatoes
- 1 envelope of Lipton Savory Herb & Garlic Soup mix (next to onion soup mix)
- Bow tie pasta and shredded parmesan cheese
