Candied Pumpkin

Preferred
- 1 4-6 lb pumpkin, stem removed, seeded & cut into 2 inch pieces with skin on
- 2 Tbsp. brown sugar
- 6 whole cloves
- 6 allspice berries
- 5 cinnamon sticks
- Juice of one orange
- Zest of 1 orange
- 4 cups of water
Baked Shrimp

Melt a stick of butter in the pan
- 1 stick butter.
- One lemon - sliced thin
- 1-2 lbs - fresh shrimp - peeled & deveined (tails on or off - your preference)
- 1 pkgs Dried Italian Seasoning
Smoked Gouda Cheese Grits

Bring chicken broth and 2 1/2 cups of 2 1/2 cups of water to a boil in a medium saucepan over medium-high heat
- VARIATION:
- 2 cups Chicken Broth
- 1 cup Uncooked quick cooking grits
- 1 cup Grated smoked Gouda cheese
- 1 Tbsp. Butter
- 1/2 tsp. Salt
- 1 lb. Raw, peeled shrimp soaked in
- 1/3 cup Dry Vermouth for 10 minutes
Blackberry Cobbler

First you should take care of the blackberry and sugar mixture because it needs to sit for a while
- 2 1/2 C Fresh blackberries, washed
- 1 C Sugar
- 1 C Flour
- 2 t Baking powder
- 1/2 t Salt
- 1 C Milk
- 1 Stick of unsalted butter, melted
Pumpkin Cream Cheese Bread

Preheat oven to 350 Prepare one mini loaf pan (it should hold 8 loaves) or 2 9x5 loaf pans with nonstick spray

- 2 cups canned pumpkin
- 3 eggs
- 1 egg whites
- 1 1/2 cups flour
- 1/2 cup white sugar
- 3/4 cup brown sugar
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- Cream Cheese filling
- 8 oz reduced fat cream cheese (room temperature or softened slightly)
- 4 tbsp sugar
- 1 egg
- 2 tsp flour
- 1 tsp vanilla
Balsamic Pork Scaloppini

Chop green onions and bell pepper
- 1/2 cup Green Onions - thinly sliced
- 1 Green bell pepper - coarsely chopped
- 1 lb Pork chops - thinly sliced boneless
- 1/2 cup Diced Pimientos, drained
- 1/2 cup Balsamic vinegar
- 1 cup Chicken Broth
- 1/4 cup Flour
- 1/2 tsp. Kosher Salt
- 1/4 tsp. pepper
- Large Zip lock bag (optional)
- 2 Tbsp Canola Oil
- TOMATO BUTTERED NOODLES
- 1 1 oz pkg Fresh Basil - coarsely chopped
- 8 oz Medium Egg noodles
- 1 4 oz contained Sun-Dried Tomato Finishing Butter
- 1/4 cup Grated Parmesan Cheese
- 1/4 tsp Kosher Salt

- 4 5-6 oz. chicken breasts seasoned with salt and pepper
- Ranch Spread
- 1/4 cup grated Parmesan cheese
- 1/4 cup of your favorite ranch dressing
- Parmesan Crumb Topping
- 1/2 cup Panko bread crumbs
- 1 teaspoon garlic salt
- 1/3 cup shredded Parmesan cheese
- 2 tablespoons melted butter
- 1 cup shredded Provolone cheese
Shrimp - Creamy Mozzarella

Cook shrimp in olive oil & garlic til slightly done (do not overcook) Remove shrimp and set aside
- 1 lb. Shrimp - peeled & deveined
- Olive Oil in frying pan
- 2 Tbsp minced garlic
- 1/2 box Penne or Ziti pasta (1/2 box)
- 1 c. Mozzarella cheese
- 1/2 c. heavy cream
- 1/2 c. milk
- 1/2 tsp red pepper flakes
- Dried Tomatoes
- 1/4 tsp. Basil (or a little more if fresh)
- 1/4 tsp. Paprika
Ambrosia Salad

In a large bowl, mix the two types of pineapple and sprinkle the pudding on top
- 1 pkg Instant Pistachio pudding (small)
- 1 16 oz Chunky pineapple (its own juice)
- 1 8 oz Crushed pineapple (its own juice)
- 1 cup Shredded coconut meat
- 1 cup Chopped walnuts or pecans
- 2 8 oz pkg Cool Whip
- 1 cup Miniature marshmallows
