Salisbury Steaks - Crockpot

Use coconut flour for thickening gravy for a lower carb recipe (get it from the health food store or online)
- Steaks
- 2 lbs extra lean ground beef
- 1/4 t sea salt
- 1/2 t ground black pepper
- 1/2 t garlic powder
- 2 T water
- Gravy
- 1 onion, chopped
- 1 c sliced mushrooms
- 1 1/2 t dried thyme
- 3 T whole wheat flour (add more for a thicker gravy-cocnut flour for low carb)
- 3 c low sodium beef broth
- 1/4 t ground black pepper
Homemade Cranberry Granola

- Homemade cranberry nut granola
- 1/3 cup toasted pumpkin seeds
- 1/4 cup sunflower seeds
- Non-stick cooking spray
- 1/3 cup maple syrup
- 2/3 cup packed brown sugar
- 1/2 cup unsweetened cranberry juice
- 1 1/2 teaspoons cinnamon
- 2 cups old fashioned rolled oats
- 1/2 cup chopped roasted and salted almonds
- 1/4 teaspoon fine sea salt
- 1 cup dried cranberries
Breakfast Egg Casserole

- 5 eggs
- 1/4 cup milk
- 16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind)
- 4 scallions (green onions, spring onions, whatever you prefer to call them)
- 1 cup shredded extra sharp cheddar cheese
- If you’re into the meats – cooked center cut bacon or cooked sausage

Chicken Pie Casserole

Preheat oven to 400. Place the chicken in a pot and cover with water, bring to a boil and cook thoroughly
- 1 whole chicken or 3 large boneless breasts
- 1 10.5 oz. can cream of chicken soup
- 1 1/2 cans chicken broth (use the chicken soup can to measure the broth...I used the water I cooked the chicken in for mine)
- 1/4 tsp. salt
- 1/2 tsp. black pepper
- 2 frozen 9" pie crust, thawed and cut into 1" strips

Fried Rice

1. Prepare rice according to package instructions to yield 4 cups cooked rice
- 4 cups rice, prepared
- 1/2 pound boneless, skinless chicken breasts, cooked or shrimp cooked
- 1 cup peas & carrots, frozen
- 1 white onion, chopped
- 2 cloves garlic, minced
- 2 eggs
- 3 tablespoons sesame oil
- 1/4 cup soy sauce
