Blueberry Salad

- 2 small boxes of black cherry Jell-O
- 2 cans blueberries
- 2 small cans crushed pineapple
- 2 bars of Philadelphia cream cheese
- 16 oz container of sour cream
- 1/2 cup chopped pecans
- 1 cup sugar
- 1/2 tsp. vanilla extract
Quick Sausage & Polenta

Heat the Tbs. of oil in a large skillet over medium-high
- 1 Tbs. extra-virgin olive oil
- 1 (14 oz) package Hillshire Farm smoked sausage, cut into 1/4-inch slices
- 1 large red bell pepper, diced
- 1 (18 oz) tube pre-made polenta (flavor is your choice), cut into 1/2-inch slices
- 2 cups parsley leaves
- 3 cloves garlic
- 1/3 cup freshly grated parmesan cheese
- 1/4 cup extra-virgin olive oil
- salt and pepper to taste
Green & White Salad

Place bacon on a plate, cover with paper towel and cook in microwave on high for 2-3 minutes til crisp
- 10 slices Cooked bacon
- 1 bunch Broccoli - about 4 cups of florets
- 1 bunch Cauliflower 4 cups of florets
- 1 lge Onion - 1 cup chopped
- 3 ribs celery - 1 cup finely diced
- 1 8 oz Reduced fat sour cream
- 3/4 cup Mayonnaise (reduced fat ok)
- 1 tsp garlic powder
- 1/2 tsp Salt
Blueberry Cinnamon Breakfast Cake

Pre-heat oven according to the cinnamon roll package instructions
- 2 packages cinnamon roll, save the icing
- 4 eggs
- ½ cup milk
- 1 teaspoon vanilla
- 1 tablespoon cinnamon
- 1 ½ cups blueberry
Boston Creme Cupcakes

(NOTE: this pudding mixture tastes like pastry cream
- Ganache:
- 1 (3.4 oz) box Vanilla instant pudding
- 1 1/2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1/4 cup milk
- 1/2 cup sour cream
- 1 c. heavy whipping cream
- 12 oz semi-sweet chocolate chips
Quinoa & Celantro Salad

Can add chicken for more protein if desired
- Salad
- 3 cups cooked quinoa (1 cup dry)
- 3/4 cup dried fruit – we used raisins, golden raisins, chopped dried apricots, and dried currants
- 1/4 pine nuts, toasted
- 1/4 cup cilantro, chopped
- 1 bell pepper of any color, diced
- Dressing
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon Dijon mustard
- 2 garlic cloves, minced
- Pinch of salt
Low Carb Quesadilla Quiche

- 8 ounces cheddar cheese, shredded
- 4 ounce can chopped green chiles
- 1 medium Roma tomato, seeded and diced, about 4 ounces
- 5 green onions, chopped
- 6 eggs
- 1/2 cup heavy cream
- 1/2 teaspoon salt
Birds Eye Cornbread Bake

Stir cornbread mixes, sour cream and eggs into large bowl until smooth
- 2 pouches cornbread mix 6.5 oz each
- 1 16 oz Sour Cream
- 2 Eggs
- 1 2 oz jar Chopped Pimento - drained
- 1 cup Shredded Cheddar Cheese
- 1/2 bag frozen Corn, thawed & drained (8 oz)
- 1/4 cup Sliced green onions
Sour Cream Coffee Cake

Base 350 for 45 mins. Cream butter, sugar and eggs
- 1 Stick Butter
- 2 eggs lightly beaten
- 1 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1 c. sugar
- 1 tsp soda mixed with
- 1 c. sour cream
- 1 Tbsp. vanilla
Canadian Bacon & Brie Quiche

Arrange bacon slices on bottom and up sides of lightly greased 9-inch pie pan slightly overlapping slices
- 16 slices Canadian bacon
- 1 8 oz Round of Brie cheese
- 8 eggs (lge) lightly beaten
- 1/2 cup Mayonnaise
- 1/2 white pepper
- 1/2 tsp grated Parmesan cheese
- 1/2 tsp Italian seasoning
