- 2 cups all-purpose flour (unbleached or regular)
- 3 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. garlic powder
- 1/3 cup butter, cold, cut into chunks
- 1 heaping cup grated cheddar cheese (sharp flavoured is best)
- 1/2 – 2/3 cups milk
- 2 Tbsp. canola or vegetable oil
- 3 Tbsp. butter
- 1/2 tsp. garlic powder
- 1/2 tsp. dried parsley flakes or 1 Tbsp. fresh parsley, finely chopped
AL Pastor Tacos

- 4 ancho
- 2 guajillo chile
- 1.5 onion
- 2 T Chipotle chile (in adobo sauce)
- 2 tsp paste
- 3/4 c pineapple
- 1/2 c vinegar
- 10 cloves of garlic
- 1 Tbs + 1 tsp kosher salt
- 1/2 tsp cinnamon
- 1 tsp oregano
Spelt whole wheat corn semolina dough

The completed dough should be a little sticky
- Mix:
- 1 cup semolina flour
- 1/4 cup corn flour
- (not corn meal)
- 1/2 cup whole wheat flour
- 1 tablespoon rye flour
- 40 grams gluten flour (1/3 cup)
- Add white bread flour to a total weight of 580 grams (4 2/3 cups)for the mixture
- Add:
- 1 1/2 cups water
- 1 cup active Italian culture
- (Note that my culture may be a little different from yours. I use equal volumes of water and all purpose flour.)
- Knead in bread machine.
- Add:
- 1 tsp salt halfway through the mixing cycle.
