Caramel Apple Pie

1.Preheat oven to 425 degrees
- 9 " unbaked pie crust
- 3-4 large granny smith apples, peeled and thinly sliced
- 6 tbsp butter
- 1/2 C brown sugar
- 1/4 C water
- 1/4 tsp cinnamon
- 1/4 tsp kosher salt
- 3 tbsp all purpose flour
- Jarred caramel, optional
- Crumb Topping
- 1 C All Purpose Flour
- 1 C brown sugar
- 1/4 C butter
Stuffed Zucchini

- 1 pound pork sausage
- 1 cup dry bread crumbs

Pineapple Casserole

- 2 (20 ounce) cans crushed pineapple (I like to use 1 can crushed and 1 can of chunks or tidbits)
- 5 tablespoons flour

Company Vegetable Casserole

In a large bowl, combine the beans, corn, soup, sour cream, cheese and onion
- 1 can (14-1/2 ounces) cut green beans, drained or 2 cups frozen cut green beans, thawed
- 1 can (15-1/4 ounces) whole kernel corn, drained or 2 cups cooked fresh or frozen whole kernel corn
- 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
- 1/2 cup sour cream
- 1/2 shredded cheddar cheese
- 1/2 cup chopped onion
- 1/4 cup butter, melted
- 3/4 cup saltine crumbs
- 1/4 cup sliced almonds, toasted
Copper Pennies

I always make these carrots for the holiday dinners
- 2 pounds carrots, sliced (I have used 3 cans of carrots, drained but fresh is always nice)
- 1 stalk celery, chopped
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 (10.75 ounce) can condensed tomato soup
- 1/3 cup vegetable oil
- 1/2 cup distilled white vinegar
- 2/3 cup white sugar

- 5 drops of red food color
- 1/2 cup chocolate sundae syrup (plus a little more for drizzling)

- 3/4 pound dried fettuccine
- 1 cup reserved pasta water
- 4 tbsp. olive oil
- 5 cloves garlic, minced
- 1/2 cup sundried tomato halves, sliced
- 1 (14.5 ounce) can of petite diced tomatoes, drained
- 3 tbsp. tomato paste
- 1/2 tbsp. granulated sugar
- 1/2 cup plain non-fat Greek yogurt
- 1/4 cup light sour cream
- 1 1/2 cups baby spinach
- Salt & pepper, to taste
- Crushed red pepper flakes (optional)
