Baked Denver Omelet

An easy, wonderful breakfast omelet using one pan!
- 2 tablespoons butter
- 1/2 onion, chopped
- 1/2 green bell pepper, chopped
- 1 cup chopped cooked ham
- 8 eggs
- 1/4 cup milk
- 1/2 cup shredded Cheddar cheese
- salt and ground black pepper to taste
Mexican Chicken Tenders

Position a rack in the upper third of the oven and preheat to 450 degrees F
- 1/4 cup plus 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon chili powder
- 2 medium red onions, sliced into 1/4-inch-thick rounds
- 1 cup reduced-fat mayonnaise
- 1/3 cup chopped fresh cilantro
- 1/2 small head cabbage, shredded (about 4 cups)
- 2 jalapeno peppers, seeded and chopped
- Kosher salt and freshly ground pepper
- 1 9-ounce bag low-sodium tortilla chips, finely crushed
- Cooking spray
- 1 1/4 pounds skinless, boneless chicken breasts, cut into 1-inch strips
Blonde Brownies

- 1 cup sifted all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/2 teaspoon salt

Cinnamon Sugar Popovers

1.In a blender, combine milk, eggs, and 1 tablespoon melted butter (cooled)
- 1 Cup Whole Milk
- 2 Large Eggs
- 1 Tablespoon Unsalted Butter, melted and cooled

Skillet Chicken Nachos

1. In 12-inch nonstick skillet, heat oil over medium-high heat
- 1 tablespoon olive or vegetable oil
- 1 1/4 lb boneless skinless chicken breasts, cut into 1/4-inch pieces
- 1 package (1 oz) Old El Paso® taco seasoning mix
- 1 can (8 oz) tomato sauce
- 1 medium red bell pepper, chopped (1 cup)
- 1 can (15 oz) Progresso® black beans, drained, rinsed
- 1 can (7 oz) Green Giant® Niblets® whole kernel sweet corn, drained 2 cups shredded Mexican cheese blend (8 oz)
- 6 oz tortilla chips (about 42 chips)
- 1/4 cup chopped fresh cilantro
Baked Shrimp with Orzo Pasta and Feta

- 1 1/2 - 2 pounds large shrimp (31 to 40 per pound), peeled and deveined
- Salt and pepper
- 1 cup chopped onion (about 1 medium yellow, white or red onion)
- 1 teaspoon extra virgin olive oil or coconut oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 6 garlic cloves, finely minced or pressed
- 1 pound orzo pasta
- 4 cups low-sodium chicken broth
- 1 cup water
- 1 (28-ounce) can diced tomatoes, drained
- 1 cup frozen peas
- 1 cup (4 ounces) feta cheese, crumbled
- Lemon wedges for serving

- Original recipe makes 1 - 9 inch pie
- 1 (9 inch) pie crust, baked
- 3 egg yolks, beaten
- 1 1/2 cups white sugar
- 3 tablespoons cornstarch
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 3 cups milk
- 1 tablespoon butter
- 1 1/2 teaspoons vanilla extract
- 1 cup frozen whipped topping, thawed (or use freshly whipped cream sweetened with 2 tablespoons of confectioner's sugar and 1 teaspoon of vanilla)

- 3-4 boneless, skinless chicken breasts (1 1/2 pounds), cut in bite-size pieces)**

- 1 1/3 cup cornstarch
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon ginger powder
- 1/4 teaspoon onion powder
- Sweet and Sour Sauce
- 1/2 cup pineapple juice (from 20 oz. pineapple tidbits can below)
- 1 cup red wine vinegar
- 1 1/2 cups sugar
- 1/4 cup + 2 tablespoons ketchup (6 tablespoons)
- 1 small onion, diced
- 2 tablespoons soy sauce
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ginger powder
- Vegetables/Pineapple
- 1 (20 oz) can pineapple tidbits
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
