1.Heat 3 tablespoons olive oil in a large saute pan
- For the vinaigrette:
- 3 Tablespoons olive oil
- 1 small French bread, cut into 1-inch cubes (6 cups)
- Kosher salt
- 1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
- 1 red bell pepper, large diced
- 1 yellow bell pepper, large diced
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, sliced in half rounds
- 1/2 pound feta cheese, cut in 1/2-inch cubes
- 1/2 cup calamata olives, pitted
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon Dijon mustard
- 1/4 cup red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup good olive oil

- 1 cup buttermilk, shaken
- 1/2 cup vegetable oil
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup freshly brewed hot coffee
- For the frosting
- 18 ounces good quality semi sweet or bittersweet chocolate; chopped
- 1 1/2 cups heavy cream

Quick Clam Chowder

Cook bacon until crisp in a small dutch oven or a large saucepan
- 3 slices of bacon
- 1/2 large onion, chopped
- 2/3 cup celery, chopped
- 1 can cream of potato soup
- 8 oz. clam juice
- 2 cans minced clams, undrained
- 1 large russet potato, peeled and diced
- 1/4 c. cream (or half and half or milk)

Meyer Lemon Asparagus Galette

You can use regular lemons if you can't find Meyer lemons
- 1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
- 3/4 cup grated Parmesan cheese
- 1 lb. thin asparagus spears, trimmed
- 1 1/2 tbsp. olive oil
- 1/2 tsp. cracked black pepper
- Juice and grated zest from 1 Meyer lemon or 1 medium lemon

- 1/4 cup Louisiana-style hot sauce (Franks Hot Sauce!!)
- 1 tablespoon salad seasoning mix (such as McCormick® Salad Supreme Seasoning)
