Fruit Salad

In a small bowl whisk together honey, orange juice and lemon zest
- Dressing:
- 1/4 cup honey
- 1/4 cup freshly squeezed
- orange juice
- 1 zest of 1 lemon
- For the salad:
- 1 lb. strawberries
- 6 oz. blueberries
- 6 oz. raspberries
- 3 kiwis, peeled and sliced
- 1 orange, wedges cut in half
- 2 apples, peeled and chopped
- 1 mango, peeled and chopped
- 2 cups grapes
Brussels Sprouts - Pan Roasted with Bacon

Cook bacon in a large skillet over medium-high heat until crispy
- 4 strips thick cut bacon
- 2 tablespoons butter
- 1 pound brussels sprouts cut
- 1/2 large onion chopped
- Salt and pepper

Heat the bacon grease in the skillet over medium heat and add the onions and garlic
- 1 pound brussels sprouts cut in half
- 1/2 onion chopped
- 1 garlic clove minced
- 4 slices cooked bacon crumbled
- 1/4 cup dry white wine
- 1 cup chicken broth
- 1/2 tsp black pepper
- 1 tbsp. bacon grease
- 1/2 tsp salt (to taste)
Banana-Carrot Almond Flour Muffins

- 2 cups blanched almond flour
- 2 teaspoons baking soda
- 1/2 teaspoon sea salt
- 1 Tablespoon ground cinnamon

Chicken with Creamy Garlic Lemon Pepper Sauce

- 2 tablespoons butter or olive oil
- 4 large cloves garlic minced
- 3/4 cup heavy whipping cream
- 1/2 cup chicken broth
- 2 teaspoons Worcestershire sauce
- zest of 1 medium lemon
- 3 tablespoons fresh lemon juice
- 1 teaspoon mustard, Dijon
- salt to taste
- black pepper to taste

Pumpkin Roll

- 1/4 cup powdered suger
- 3/4 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon pumpkin pie spice
- 1/4 teaspoon salt

- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- Filling
- 1 - 8 ounce cream cheese softened
- 1 cup powdered sugar sifted
- 6 tablespoons butter softened
- 1 teaspoon vanilla extract
