Appetizer - Roasted Grapes

- 3 cups seedless red grapes
- 2 tsp. canola oil
- 2 fresh thyme or rosemary springs
- 1/2 tsp. sea salt
- Cream cheese
- Honey
- Toasted baguettes
Sweet potatoes - Baked

Heat oven to 350 degrees F
- 2 tablespoons olive oil
- 3 large sweet potatoes
- 2 pinches dried oregano or rosemary
- 2 pinches salt
- 2 pinches ground black pepper
Sweet Potato/Spinach Lasagna

Preheat oven to 450 degrees Coat potato slices w/olive oil and layer on baking sheet
- 2 lbs. sweet potatoes cut into 1/4 inch slice
- 2 tsp. olive oil
- 1-1/2 lbs. ground turkey (or venison)
- 1 medium onion chopped
- 2 cloves garlic, minced
- 2 cans tomato sauce
- 2 cans diced tomatoes
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 cup low-fat ricotta cheese
- 1 cup low-fat cottage cheese
- 1 egg, lightly beaten
- 1 egg white
- 1-10 oz. frozen chopped spinach, thawed and drained
- 1 cup shredded part-skim mozzarella cheese
- Top with grated parmesan cheese (optional)
Waffles - Grandma Young's

Beat until smooth. Bank in hot waffle iron
- 2 eggs - beat well
- 2 cups buttermilk
- 1 tsp. soda
- 2 cups sifted flour
- 1/2 tsp salt
- 6 Tbls. melted shortening
Breakfast - Sunrise Skillet

Cook bacon in large skillet over medium heat until slightly crispy; drain on paper towels
- 8 oz. bacon
- 4 cups cubed hash browns or peeled and died potatoes
- 1/2 onion, diced
- 6 eggs, beaten
- 1 cup shredded Cheddar cheese
- 2 green onions or scallions, chopped
French Onion Soup

Melt the stick of butter in a large pot over medium heat
- 1/2 cup unsalted butter
- 3 large Vadalia onions and 3 large red onions
- 2 garlic cloves, chopped
- 2 bay leaves
- 2 fresh thyme sprigs
- Kosher salt and freshly ground black pepper
- 1 cup red wine
- 3 heaping tablespoons all- purpose flour
- 2 quarts beef broth
- 1 baguette, sliced
- 1/2 pound grated Swiss cheese
Salmon - Citrus Glazed

Thaw fish if frozen. Preheat oven to 450 degrees
- 1 2 lb fresh or frozen salmon fillet, skin removed
- Salt
- Ground black pepper
- 3/4 cup orange marmalade
- 1/4 cup sliced green onions (2)
- 1 clove garlic, minced
- 2 tsp dry white wine
- 1 tsp. grated fresh ginger
- 1 tsp Dijon style mustard
- 1/4 tsp. cayenne pepper
- 1/8 tsp five spice powder
- 3 Tbsp. sliced almonds, toasted
Brownies

Mix all together at once. Put in 9 X 13 pan
- 4 eggs beaten
- 2 cups sugar
- 1-1/2 cups flour
- 1 cup oil
- 1/2 cup Hershey's cocoa
- 2 tsps. salt
- 2 tsps. vanilla
- 1 cup nuts (optional)
Granola

- 1-1/2 cup walnuts
- 1 cup coconut (big flakes)
- 1/2 tsp. sea salt
- 2/3 cup dried cherries or craisins
- Zest of 2 oranges
- 1/2 cup butter (melted)
- 1/2 cup maple syrup
Barbecue Ribs

- 1 tablespoon paprika
- 1 tablespoon garlic powder
