Cookies - Fudgy Chocolate Peppermint

Preheat oven to 350 degrees
- 1-1/2 cups white whole-wheat flour
- 5 tablespoons unsweetened cocoa, sifted
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 7 tablespoons unsalted butter, softened
- 1/4 teaspoon vanilla extract
- 1 large egg
- 1-1/2 ounces peppermint candy crushed
Boursin Cheese Spread - Copycat

1. Position knife blade in food processor bowl; add garlic clove
- 1 garlic clove
- 2 (8 ounce) packages cream cheese (softened)
- 1 cup butter
- 1 teaspoon dried oregano
- 1/4 teaspoon dried dill weed
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon dried thyme
- 1/4 teaspoon pepper
Cauliflower Pizza Crust

1. Preheat oven to 400 degrees F
- 1 head cauliflower (about 4 cups)
- 2 clove garlic, minced
- 2 cup part-skim shredded mozzarella cheese
- 2 eggs, beaten
- 2 teaspoons basil
- 2 teaspoons oregano
Tomatoes - Italian Style Stewed for Canning

Blanch, peel, core and quarter tomatoes
- 5 quarts (20 cups) tomatoes, peeled, cored ( the stem at the top) and quartered
- 4 cup chopped onions
- 4 cups chopped bell peppers (green and red)
- 1/4 cup minced garlic
- 1/4 cup chopped fresh oregano
- 2 tablespoons olive oil
- 1 tablespoon sugar
- 3/4 cup white vinegar
- 1 teaspoon salt per quart jar
Cream Cheese from Goat Cheese

Put ingredients in food processor or blender; or use hand mixer and beat until blended
- 8 oz Plain soft Goat Cheese
- 2 tablespoons sugar, maple sugar or honey
- 1 teaspoon vanilla
- zest of 1/3 to 1/2 organic lemon

- 3/4 cup dry bread crumbs
- Coarse salt and freshly ground pepper
- 1-1/2 cups sliced almonds, broken into pieces
- 2 large eggs
- 2 teaspoons water
- 2 whole boneless skinless chicken breasts
- 2 tablespoons unsalted butter
- 2 tablespoons canola oil

- 2 Tbls. margarine - melted
- 1 tsp. vanilla
- 1/8 tsp salt

Combine the lettuce, cheese, craisins, cashews and cubed apple and pear in a large bowl
- Dressing:
- 1 to 1 -/12 heads Romaine lettuce, torn
- 1 cup shredded Swiss cheese
- 1/2 cup Craisins
- 1 cup cashews or cashew pieces
- 1 apple, cubed
- 1 pear, cubed
- 1/2 cup sugar
- 1/2 tsp salt
- 1 tsp. Dijon mustard
- 1 Tbls. poppy seeds
- 1 Tbls. grated onion
- 1/3 cup lemon juice
- 2/3 cup oil
Prime Rib

1. Preheat oven to 500 degrees
- 1 cup butter softened
- 7 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons salt
- 1 tablespoon pepper
- 5-7 pounds boneless ribeye roast, trimmed
- 2 tablespoons flour
- 2 cups beef stock
- Mashed potatoes to serve.

- 1/2 cup sour cream
- 1/2 tsp. garlic powder
- Zest of 1 large lemon
- 1/2 tsp. salt
- 1/4 cup dill, chopped
- butter, enough to spread
- 16 oz. smoked salmon
- 3 soft, large tortillas
