Sweet Potatoes - Honey Roasted

Preheat oven to 350 degrees F
- 2 lbs red skinned sweet potatoes
- 2 tablespoons olive oil
- 2 tablespoon honey
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
Broccoli

Preheat oven at 375 degrees
- 1 head broccoli
- 2-3 cloves garlic/minced
- 2 tablespoons oil
- A few shakes of salt and pepper
Turkey & Spinach Stuffing Casserole

Preheat oven to 350 degrees
- 1 can (14-1/2 ounces) reduced sodium chicken broth
- 3 tablespoons butter
- 3 cups stuffing mix
- 3 cups cubed cooked turkey
- 2 cups fresh baby spinach
- 1/2 cup dried cranberries
- 3/4 cup shredded cheddar cheese
Venison Chops

Thinly slice the deer chops and brown them in a heavy skillet over medium-high heat
- 2 pounds venison chops
- 1 cup ketchup
- 1/2 cup water
- 1 medium onion, chopped
- 1/2 cup packed brown sugar
- 1 (1 ounce) envelope dry onion soup mix
Appetizer - Serve on cracker and chips

Mix all together and serve with cracker or chips
- 1 avocado, peeled and chopped
- 1 container of cherry tomatoes, cut in half or thirds
- 1/4 red onion, chopped
- 1 clove of garlic
- 1 Tbsp. cilantro
- 1 Tbsp. oregano
- 1 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 4 oz Feta Cheese; reg or garlic herb (I use goat cheese)
- Lime juice, small splash
Taco Crescent Bake

1. Heat oven to 375 degrees F
- 1 can (8 oz,) Pillsbury refrigerated crescent dinner rolls
- 1 pound lean ground beef
- 3/4 cup Old El Paso Thick 'n Chunky salsa
- 2 tablespoons Old El Paso taco seasoning mix (from 1 oz. package)
- 1 cup shredded Cheddar cheese (4 oz.)
- Shredded lettuce
- Diced Tomato
Sweet Potato Pie

1. Boil sweet potato whole in skin for 40 to 50 minutes, or until done
- 1 (1 pound) sweet potato
- 1/2 cup butter, softened
- 1 cup white sugar
- 1/2 cup milk
- 2 eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 (9 inch) unbaked pie crust
Pea Soup

Night before you want to make soup; soak peas in pot of water (cover peas with about 2"of water)
- Split peas - 1/2 pound
- Whole peas - 1/2 pound
- Onion, 1 large, chopped
- Celery, 2 medium stalks, finely chopped
- Ham bone and leftover ham, 2 lbs.
- Carrots, 3 medium sliced
- Ground cloves, a couple dashes
- Thyme, a couple dashes
- Pepper - 1/4 tsp.
- Salt to taste
Fruit Salad

In a small bowl whisk together honey, orange juice and lemon zest
- For the dressing:
- 1/4 1/4 1/4 cup honey
- 1/4 1/4 1/4 cup freshly squeezed orange juice
- 1 Zest of 1 lemon
- For the salad:
- 1 1 1 lb. strawberries, hulled and quartered
- 6 6 6 oz. blueberries
- 6 6 6 oz. raspberries
- 3 3 3 kiwis, peeled and sliced
- 1 1 1 orange, peeled and wedges cut in half
- 2 2 2 apples, peeled and chopped
- 1 1 1 mango, peeled and chopped
- 2 2 2 cups grapes
Potatoes - Baked Baby Reds
