1. Preheat oven to 350 degrees and prepare a 9x13 pan with butter or baking spray
- 1/2 cup vegetable oil
- 1-1/2 cups granulated sugar
- 1 Tbsp. vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1-1/2 tsp. baking soda
- 1 tsp. salt
- 3 cups finely shredded zucchini - DO NOT DRAIN
- 1-1/4 cups cocoa chips
Chicken - Creamy Bacon Mushroom Thyme

1. Preheat oven to 350 degrees
- Creamy Bacon Mushroom Thyme Sauce:
- 4 4 4 boneless chicken breasts
- 1 1 1 tablespoon olive oil
- 2 2 2 teaspoons Italian seasoning
- Salt and pepper
- 1 1 1 tablespoon olive oil
- 8 8 8 ounces white mushrooms, sliced
- 6 6 6 slices bacon, cooked and crumbled
- 1 1 1 cup heavy cream
- 1/2 1/2 1/2 teaspoon salt
- 1/4 1/4 1/4 teaspoon pepper
- 1 1 1 teaspoon garlic powder
- 1 1 1 tablespoon fresh thyme, stems removed
Chicken/Mushroom Pasta

Salt & pepper both sides of chicken
- 3 chicken breasts cut in half or 6 thin breasts (skinless, boneless)
- 2 tablespoons or more flour for dusting chicken
- 3 tablespoons Olive oil
- 2 tablespoons butter
- Medium onion/chopped
- Garlic - 5 cloves
- 1 pound mushrooms (sliced)
- Salt & pepper
- Thyme (fresh) 1 Tablespoon
- Parsley (fresh) 2 Tablespoons
- Cream Cheese - Generous 2 Tablespoons
- Egg noodles.
Veggie Pizza (Cold)

1. Preheat oven to 375 degrees
- 2 packages Pillsbury Crescent Dough Sheets
- 2 packages (8 oz. each) cream cheese, room temperature
- 1/2 cup mayonnaise
- 1 ounce package dry ranch dressing mix
- 4 cups assorted chopped vegetables such as carrots, broccoli and cauliflower
Tomato Soup - Ripe Tomatoes - Creamy

Heat the olive oil in a large, heavy-bottomed pot over medium-low heat
- 3 tablespoons olive oil
- 1-1/2 cups chopped red onions
- 2 carrots, chopped
- 1 Tablespoon minced garlic (3 cloves)
- 4 pounds fresh tomatoes, coarsely chopped (5 large)
- 1-1/2 teaspoons sugar
- 1 Tablespoon tomato paste
- 1/4 cup packed chopped fresh basil
- 3 cups chicken stock
- 1 Tablespoon kosher salt
- 2 teaspoons freshly ground black pepper
- 3/4 cup heavy cream (I use one can of coconut milk)
Steel Cut Oatmeal

- 1 tablespoon butter
- 1 cup steel cut oats
- 3 cups boiling water
- 1/2 cup whole milk
- 1/2 cup plus 1 tablespoon low-fat buttermilk
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
Taco Soup

1. In 3-quart saucepan, brown ground beef until thoroughly cooked; drain
- 1 lb lean ground beef
- 1/4 cup sliced green onions
- 1 Package (1 oz) taco seasoning mix
- 1 can (28 oz) diced tomatoes, undrained
- 1 cup frozen corn
- 1 cup water
- 1/2 cup finely shredded cheese
Turkey & Spinach Stuffing Casserole

- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 3 tablespoons butter
- 3 cups stuffing mix
- 3 cups cubed cooked turkey
- 2 cups fresh baby spinach
- 1/2 cup dried cranberries
- 3/4 cup shredded cheddar cheese
